Danubio salato super facile - Danube (homemade fulfilled bread, super easy!)





Ottima ricetta e facile davvero! buona per gite, per merende, per pranzo al sacco, per buffet, per festicciuole...
Mi piace perchè non mi obbliga a prendere una laurea distinguendo la forza delle farine...e poi perchè non mi obbliga a comprare una planetaria, che per me è giusto una specie di macchina che proietta il cielo stellato sul soffitto, o qualcosa di simile...
Ho scoperto che si chiama Danubio perchè in realtà venne copiato da un cuoco calabrese, il quale negli anni '20 aprì una pasticceria a Napoli, aiutato dalla moglie originaria di Salisburgo. Quindi la moglie lo istruì a preparare i butcheln! che erano dei soffici panbrioche ripieni di marmellata.
la tradizione partenopea li ha trasformati nel cosiddetto Danubio salato, cioè panini briosciosi ripieni di formaggi tipici del sud italia e salumi vari.

Stasera ho portato un Danubio alla VHS dove lavoro (una specie di università serale, in italia assomiglia alla Università Popolare che esiste solo in alcune città, per es. a Torino).
Abbiamo fatto una lezione e una piccola "festicciola" mangereccia: io ho portato questo Danubio un po' asciutto per via del forno nuovo, che ho da poco testato. Stiamo prendendo confidenza, io e lui...
Le altre studentesse hanno portato dei biscotti fatti in casa che sono a dir poco DELIZIOSI, e di cui spero di avere presto la ricetta per cimentarmi, oppure semplicemente per scriverla qui. Slurp!

ma andiamo con ordine.
Il Danubio che vedete nella foto ha il ripieno giallo perchè ci ho schiaffato dentro del Cheddar, formaggio che talvolta compro qui in Teteschia.

INGREDIENTI :

550 gr farina
15 gr lievito di birra
1 uovo
250 ml latte
20 gr zucchero
50 gr olio di oliva
10 gr sale
Per il ripieno: Formaggi vari, salumi (anche veg ovviamente), spinaci o altre verdure

Mescola il latte (tiepido ma non caldo bollente!) con il lievito di birra, poi aggiungici l'uovo, l'olio e lo zucchero e mescola. Versa questo liquido sulla farina e impasta. Dopo aver impastato per 5 minuti (pazienza ci vuole!), metti a riposare in una ciotola per due ore, coperto da un panno.
Dopo due ore, àrmati di bilancia: prendi dei pezzetti di impasto e pesali, per avere la certezza che siano tutti grandi più o meno uguali: circa 45 gr l'uno.
Appiattisci e fai un disco di pasta con il mattarello o con le dita: al centro, metti il ripieno che più ti aggrada: 2 o 3 cubetti di formaggio, un pezzetto di salume (veg se ti piace), un cucchiaino di spinaci passati in padella e MOLTO asciutti.
Poi richiudi il disco di pasta e fai una forma di palla, e mettila al centro della teglia.
Ripeti con le altre pallette di pasta (devono essere una ventina in totale), e sistemale intorno alla palla centrale, come se fosse un fiore.
Alla fine, metti in forno per 30-40 min a 180° (forno statico e non ventilato: se usi il ventilato, cuoce più in fretta e asciuga troppo).

Excellent recipe, and really easy!
It iss called Danube, like the river, but it is typical of Naples. I discovered that it is called the Danube because in reality it was copied by a cook from Calabria, who during the '20 opened a patisserie in Naples, helped by his wife: she was from Salzburg. Then it was probably thanks to his wife that he learned how to prepare the butcheln! Butcheln were exactly these fluffy brioches filled with jam.
The neapolitan tradition has them processed in the so-called salty Danube , soft fufffy sandwiches stuffed with typical cheese and hams from southern Italy.

Tonight I brought this Danube to the Popular University where I work. I filled it with spinach, ham and cheese.
We did a lesson and then a small "eating celebration": I brought this Danube, while the other students had prepared delicious homemade biscuits,  I hope to soon have their recipes to experiment! Slurp!

But we go with order.
ps. the yellow you can see inside the Danube, is CHEDDAR (not egg, like someone guessed!)

Ingredients :

550 g flour
15 gr yeast
1 egg
250 ml milk
20 gr sugar
50 gr (olive) oil
10 g salt

For the stuffing: various cheeses, salami (veg or not, depending on the taste), spinach or other vegetables

Mix the milk (lukewarm but not boiling hot!) with the yeast, then add the egg, the oil and the sugar and mix everything. Pour this liquid into the flour and mix. Work the dough for 5 minutes (patience is needed!), put to rest in a bowl for two hours, covered by a cloth.
After two hours, take a scale: take pieces of dough so that they are all the same measure, more or less 45 gr each.
Flatten every piece of dough, make a disk with a rolling pin or with your fingers: in the center, put the filling that you like most: 2 or 3 cubes of cheese, a piece of salami (veg if you like), a teaspoon of strained spinach in the pan (they need to be very dry).
Then close the disk, giving it the form of a ball; put it at the center of the pan.
Repeat with the other balls of pasta (they should be around twenty balls in total), and put them around the central ball, as to create a flower.
Put the flower in the oven for 30-40 min at 180° (static oven and not ventilated: If you use the ventilated, it will cook faster but it will get dry).

Torta cremosa e umida di mele - facilissima! - Moist and creamy apple pie - super easy!


la foto è brutta ma la torta è buonissima!





La vita in Germania non è sempre facile. Scopri per esempio che la burocrazia è pure peggio che in Italia (però, quando scrivi una email a un ufficio pubblico per dire che hai perso l'importantissimo documento che avevi ricevuto via posta due giorni prima, ti rispondono la mattina dopo dicendoti che ti hanno appena inviato la seconda copia.

Scopri che tutti i luoghi comuni sul cibo tedesco sono tendenzialmente veri, anche per te che hai sempre difeso strenuamente il valore delle differenze, rifiutandoti di dire che la cucina italiana è la più buona del mondo, perchè non è vero.
Epperò, diciamocelo, cominci anche a rivalutare questo luogo comune, e in effetti qui non è che il cibo sia poi così vario e godurioso...
però scopri qualche fantaaaaastico ristorantino con tipico cibo svevo:  non brilla per varietà, i piatti sono sempre quelli (pochi),  ma in Italia è un po' la stessa cosa no? se vai sempre nelle trattorie regionali! quindi, piatti ripetitivi, sì, ma il cibo è buono e goloso!
Certo i vegetariani qui non hanno vita facile. La carne la fa da padrone....

Scopri che anche se siamo nella brianza tedesca, non girano solo soldi ma la cultura c'è se la vai a cercare. Anche se le città sembrano girare, a un primo sguardo superficiale, solo intorno a industria e produzione.
Ho trovato le maratone di lettura di Umberto Eco organizzate da un centro culturale per il prossimo anno.... in tedesco naturalmente! speriamo che il mio nuovo corso mi aiuti a seguirne almeno un po'.
In realtà io avrei sempre desiderato imparare il tedesco per poter leggere in originale il mio scrittore (all'epoca) preferito, Thomas Mann.
Oggi che sto imparando il tedesco davvero, le mie ambizioni si sono ridimensionate, e se riuscissi a leggere le istruzioni per avviare la lavatrice sarebbe già un gran successo.
Ma vabbè.

In tutto questo, il mio rapporto con la cucina si sta modificando. Sarà che mi guardano (pure a casa!) come una marziana per il tempo che passo in cucina, o per meglio dire: passavo.
Sarà che alla fine ho un sacco di cose da fare, e spesso, visto che abito un po' fuori città ,se esco alla mattina per una commissione e devo tornare in centro nel pomeriggio, e magari fare lezione fino a sera, non passo dal via (cioè da casa) nè a pranzo nè a cena.
Insomma, diciamo che "sto uscendo dal tunnel", e mi sto addirittura convertendo al cibo pronto (ovvove!) o meglio, diciamo, semplificato. Per avere più tempo per il resto.

va beh, dai, forse sto esagerando: per una volta che ho comprato i maultaschen già pronti! (specie di rotoloni di pasta avvolta a spirale con in mezzo un ripieno di spinaci e formaggio (una sorta di cannellone)...
Però qui, davvero, se ti invitano amici a cena, la normalità è trovarsi nel piatto qualche surgelato bofrost. Però nessuno sta troppo dietro ai fornelli, mi pare di capire: l'importante è godersi la giornata e il tempo con gli amici, molto più che non mangiare insieme. Insomma, la filosofia non è mica male.
Quasi quasi mi converto. Anche la parte relativa alla scoperta dei ristorantini non mi dispiace affatto.

Però so che riprenderò con più calma. E comunque, almeno una o due ricette alla settimana le provo.

Questa volta, è toccato alla torta di mele. A me non piacciono le torte "panose" come le chiamo io, cioè alte e soffici, asciuttine, lievitate per bene. Proprio no. Mi paiono pane dolce da pucciare nel latte, e io latte non ne bevo. Non mi piacciono le torte asciutte e ben lievitate, in genere.
Però tempo fa avevo assaggiato una torta di mele DIVINA, piena di mele, bagnaticcia e umidiccia come piace a me la torta.
Non buona come le torte di mele francesi, basse e umidissime, ma cmq ottima davvero.
Ho perso la ricetta....ma piùù o meno la ricordavo.
é una torta di mele cremosa, cioè non vi preoccupate se, dopo un'ora di cottura in forno, la tagliate e trovate dell'umido o addirittura un po' di impasto che cola cremoso fuori. é normale. E' cotta (1 ora a 200 gr in forno e sfido a dire cche è cruda) ma resta cosi, grazie all impasto assai liquido e all'esagerata presenza di mele che tengono insieme la crema e l'involucro cotto.
Molto buona :) anche come dopocena.
A me fa impazzire calda, magari con gelato o panna liquida o yogurt.
Ma anche fredda è assai bona. E reesta cremosa!
la prossima volta provo con la stevia...

INGREDIENTI:

2 uova
110 gr zucchero
130 gr farina
1 bustina di lievito
cannella come se non ci fosse un domani (per me, voi mettetene pure meno)
5 o 6 mele belle grosse
300 ml latte
30 gr burro

Montate le uova con lo zucchero fino a farle diventare belle spumose e chiare.
Aggiungete il latte, e continuate a montare.
aggiungete il lievito e la farina e continuate a montare. 
Fate sciogliere il burro e quando è un po' raffreddato aggiungetelo, continuando a montare.
Aggiungete cannella a piacere, e infine le mele tagliate a fettine sottili.
Mescolate, e mettete in uno stampo. Cuocete in forno a 200 ° per 50 o anche 60 minuti.
togliete dal forno e lasciate raffreddare.

Life in Germany is not always easy. For instance, bureaucracy is also worse than in Italy (however, when I wrote yesterday an email to a public office to inform that I had lost that very important document that they sent me by mail two days before, well, today I already received an answer, telling me that they had just sent me again the copy).

I am discovering that all the common clichè on the german food is basically true, despite the fact that I have always defended strenuously the value of the differences, rejecting who said that Italian cuisine is the best in the world, because it is not true...but then..., let's face it, here cuisine is not a great stuff.
However, I discovered some fantastic little cozy restaurants with, for example, typical Swabian food, which does not stand out for variety (always the same dishes eh, but in italy it is not so different, in the traditional trattorie!) but it is delicious.

for sure, vegetarians here do not have an easy life. Meat is everywhere.

I am discovering that even if we are in "german Brianza", you can find cultural  events.
I found the reading marathons of books by Umberto Eco for next year....clearly,  in German language, of course! I hope that my new german language course will help me to follow at least a little bit. And anyway, I planned to give a course of italian literature for the next year, and it will be also around Eco, but in italian! :) for my italian learners.
Actually, I always wanted to learn german because of my passion for Thomas Mann, I always wanted to be able to read him in his original language.
Now that I really started to learn german, my ambitions have been come back to right perspective: it would be a great success to be able to read the instruction for the washing machine.
Anyway.

In all this, my relationship with the kitchen is changing. Maybe 'cos I noticed that germans look at me as an alien, since I effectively USE the kitchen to cook (microwave apart), or maybe because I have a lot to do and to discover, well: I stepped back a bit, converting to ready-already-made-food (hovvov!) or, at least, simplified. In order to have more time for all the rest.
Here, if you are invited by friends for dinner, the normality you can expect is normally frozen food. However, None bothers with the stoves, and then we all have time to go to stroll.
Not a bad approach, I would say, I am appreciating this more and more.
Also the restaurant discovery part. I like it.

But I know that I will come back to cooking with more calm. And anyway, it is not that I completely stopped.
At least one or two recipes every week, I still try.

This time, it was the time to try another apple pie. I do not like the "bread-ish" cakes, i.e. high and fluffy, dry, leavened dough.. not for me, no. They seem to me just as sweet bread for milk, and i do not drink milk.
However some time ago I tasted a cake which was YUMMM, with apples, full of apples, moisty and sweat as I like the cake to be.
Not as good as some french apple pies, low and wet, but really excellent.
I lost the recipe....but I remembered.
It is a waffle creamy, so do not worry if, after an hour of baking in the oven, you'll cut it and you'll find the damp or even a bit of dough leaking out as a cream.
It is cooked, but the liquid dough and the enormous quantity of apples will keep it creamy and wet.
Very good :) also as after dinner.
To me it is delicious hot, perhaps with ice cream or liquid cream or yoghurt.
But even cold is very good. And creamy !
next time I 'll try with stevia...

Ingredients:

2 eggs
110 g sugar
130 g flour
1  baking poweder (16 gr)
cinnamon as if there were not a tomorrow (as much as you like, ehm)
5 or 6 very large apples
300 ml milk
30 gr butter

Beat the eggs with the electrical egg beater. Add the sugar until they become fluffy and clear.
Add the milk and keep beating
add the baking powder and flour and continue beating.
Melt the butter and when it is a little cooled add it, continuing to beat
Add cinnamon powder, and finally apples cut into thin slices.
 put everything into a mold with baking paper. Cook in the oven at 200 ° for 50 or even 60 minutes.
Remove from the oven and  cool.

mini cup cakes al cioccolate cotte al microonde pronte in 1 minuto! - small cup cakes cooked in microwave in 1 minute!



qui sotto un simpatico cortometraggio che ho trovato su youtube: a noi donne non va mai bene nessuno eh :)))))

e dei tortini super veloci. State guardando un film e volete gustarvi un dolcetto ma non avete troppa voglia di aspettare la cottura, preparare gli ingredienti ecc? vi basta una frusta (o lo sbattitore elettrico: ma scommetto che anche senza farle gonfiare, la ricetta viene lo stesso: la prossima volta non le monterò!) , un pochino di burro fuso al microonde e una pesatina agli ingredienti. Un minuto, massimo un minuto e mezzo di microonde e sono cotte. Ricordatevi di mettere uno o due quadretti di cioccolato sopra al tortino, sarà un cuoricino morbidoso che vi piacerà assai
.
INGREDIENTI per ca. 4 tortini:

2 uova
100 gr zucchero
50 gr burro fuso
30 gr cacao amaro
150 gr farina
140 latte
6 grammi lievito in polvere
cioccolato bianco
cioccolato nero

Sbattere le due uova con lo zucchero fino a farle gonfiare, aggiungere piano piano sempre sbattendo il burro fuso e poi anche tutti gli altri ingredienti. Mettere l'impasto in tazza o in ciotolino (non riempire fino all'orlo se no, gonfiando, uscirà fuori) , adagiare in cima un quadretto di cioccolato bianco e uno di cioccolato nero, e cuocere in microonde a massima potenza per un minuto.
Torta pronta! gnammm!!!


A funny short movie (In italian, unfortunately) that shows how women are never happy with men :))

Ingredients for about 4 small cakes:

2 eggs
100 g sugar
50 g melted butter
30 gr unsweetened cocoa
150 gr flour
120 gr milk
6 grams baking powder
white chocolate
chocolate black

beat two eggs with sugar until they will be foamy, add  bit by bit also the melted butter and then all the other ingredients, keep beating. Put the dough in a small cup or small bowl (do not fill to the brim! just half or less 'cos it will grow while cooking) , lay on top a piece of white chocolate and one of black chocolate, cook in a microwave at maximum power for a minute. My microwave has maximum at 900, so i need two minutes.
The cake is ready! Gnammm!!!

Torta di verdure alla genovese - vegetable pie ligurian style







sono appassionata di foto e dopo aver lavorato con la mia reflex, ora mi "riduco" a fare foto col cellulare maffo....e le foto del blog sono orrende! ma il tempo è quel che è...
La cucina della mia regione è di base vegetariana,  e le torte salate sono un must: ce ne sono di quasi ogni tipo ma le più famose sono la torta di gee (= bietole, in dialetto genovese!), la torta di carciofi o pasqualina, la torta di zucca, la torta di cipolle, il polpettone di patate e fagiolini. E poi largo alla fantasia: qualsiasi altra verdura è benvenuta!
Ecco qui la ricetta della torta di gee come in maniera del tutto semplice, la fa mia mamma...


Importante:
se possibile NON usate la pasta sfoglia comprata fatta.  fa obiettivamente schifo....(a parte gli ingredientacci con cui è fatta). E perchè questa ricetta di sfoglia come la facciamo a Genova, non ha uova, è leggera ed è pure velocissima.
E vi assicuro che la differenza SI SENTE. 


Due precisazioni:
1) la ricetta originale prevede l'uso della "prescinseua"che è una cosa che si trova a Genova ma non altrove. Per chi ha un supermercato Lidl a portata di mano, suggerisco di usare il quark che  è a metà tra la ricotta e lo yogurt.

2) la ricetta originale prevede che la torta abbia uno strato basso di verdure, e uno strato alto di ricotta/prescinseua, nettamente separati. Un po' come avviene per la moussaka, o per le pies inglesi. Mia mamma (cosi come la gran parte dei genovesi di mia conoscenza) invece mescola insieme la verdura e il formaggio, e l'impasto ovvimente ne risulta amalgamato e più simile nel gusto qualsiasi morso si dia..)a voi la scelta!


3) fredda è più buona perchè il formaggio si raffredda e si compatta. Ma io la adoro pure caldina!


4) c è chi dice che le uova nell'impasto non ci vadano. Io sono assolutamente d'accordo, sia perchè nelle trattorie dove la vendono ancora a peso si vede chiaramente che il ripieno non è "tenuto insieme" dalle uova (vedi la trattoria/rosticceria Guglie vicino a Brignole, che la fa spaziale) sia perchè così resta più leggera. 

Secondo me è cmq questa la versione tradizionale. Mia mamma però....le uova le usa. Quindi toulì, vi do entrambe le versioni.


INGREDIENTI: 


PER LA SFOGLIA:
io di solito la faccio con 400 gr di farina (amo abbondare) ma vi do le proporzioni:


per ogni 200 gr di farina (se possibile: 100 gr di farina 00 e 100 gr di farina manitoba)
2 cucchiai di olio
1 buon pizzico di sale
acqua q.b. (quanto basta)


PER IL RIPIENO:


1 chilo di bietole
250g di ricotta (500 gr se volete fare la versione con i due strati ben separati)
1 uovo (opzionale)
50g di parmigiano grattugiato
1 cipolla
Sale
Maggiorana.
noce moscata
altre 2 o 3 uova (opzionali) da aggiungere intere per "decorazione" del ripieno)



Preparazione della pasta:
Impastate le farine con l'olio e sufficiente acqua per ottenere un panetto elastico, che metterete a riposare almeno un'ora in frigo, coperto da un panno.


Preparazione del ripieno: 1) VERSIONE ORIGINALE
Spolverate la superficie della verdura con un paio di cucchiai di farina per assorbire l'umidità, altrimenti la pasta potrebbe impregnarsi troppo di acqua e risultare appiccicosa al momento della degustazione....

Impastate le farine con l'olio e sufficiente acqua per ottenere un panetto elastico, che metterete a riposare almeno un'ora in frigo, coperto da un panno.
Pulire e sbollentare le bietole
In una ciotola a parte unire la prescinseua (se non l'avete, usate tranquillamente la ricotta oppure metà ricotta mescolata con metà yogurt intero o magro, per ottenere un sapore il più simile all'originale prescinseua), il formaggio grattato, sale e maggioranza e amalgamare il tutto . SE volete, potete aggiungere un uovo all'impasto per ottenere un composto "più compatto" (mia mamma lo fa, l'amico Maurizio cui appartengono le foto, anche lo mette: ma nella ricetta originale NON ci vuole, e ovviamente la torta risulta meno compatta. IO vi consiglio di mettere l'uovo nel caso in cui abbiate scelto di mescolare la ricotta con lo yogurt, perchè terrà meglio insieme la parte del formaggio)
Tagliare la cipolla e rosolarle in una padella con le bietole bollite.
Una volta rosolato il tutto, tritarlo grossolanamente con coltello o mezzaluna e aggiungere all'impasto di ricotta o formaggio precedentemente preparato ..
Tirate fuori la pasta dal frigo, dividetela a metà, stendetene uno strato per coprire un tegame da forno, versate l'impasto di biete e ricotta nel tegame (se invece optate per la versione orginale della torta coi due strati distinti, versate le bietole. Sopra, versate l'impasto di ricotta o di prescinseua/quark/ricotta e yogurt con un uovo mescolato insieme) . 

TRUCCHETTO: spolverate a questo punto le biete con un po' di farina per assorbire l eccesso di umidità!
A piacimento mettere tre uova come da foto, chiudere con un altro strato di pasta stesa col mattarello e infornare per 40/45 minuti circa e cmq fino a quando la pasta è bella doratina. Mangiatela fredda se....riuscite ad aspettare! ma pure calda è deliziosa!

FIRST OF ALL:  I am passionate of photography and I worked also with my professional Canon for a couple of years making pics for Lavazza archive (a fun, more than a job). At the moment, I almost have not the time to take pics for fun when I travel. So, for this blog, the pics are getting worse and worse, taken with a bad mobile phone....but even if they don't "look" so good as before, recipes are generally good :)


The cuisine of my region is basically vegetarian.  the most famous pies are the beets pie and the artichokes pie or easter pie, the pumpkin pie, and the onions pie, Polpettone (loaf) with potatoes and beans. Etcetera: Any other vegetable is welcome!
Here is the beets recipe ...


Important:
if possible, do not use the puff pastry from supermarket..full of palm oil. Anyway, quite tasteless.
 The Genoa recipe is without eggs, light and very fast.

 notes:
1) The original recipe uses a special cheese which is not distant from german quark (but a little more sour). It is a sort of light cheese similar to thick yogurt. Otherwise, we normally use ricotta cheese in italy.


2) The original recipe puts two layers of ingredients: lower layer - the cooked beets, and above a layer with ricotta/cheese, clearly separated. As you can see in moussaka, or in english pies. But at home we generally mix the vegetables and the cheese 
together , the choice is yours!

3) cold is better they say, but I like both ways, also warm!

4) you can avoid the eggs! 

 I give you both versions.


Ingredients:

For the pastry:

400 gr flour in these proportions:
(if possible: 200 gr of flour 00 and 200 gr of flour manitoba)
4 tablespoons oil
2 pinch of salt
water q.s. (enough)

FOR THE FILLING:

1 kilo of green beets
250g ricotta + 1 thick white yogurt 125 gr
(or: instead of ricotta and yogurt: same amount of quark)
1 egg (optional)
50g grated parmesan cheese
1 onion
salt
marjoram.
nutmeg
other 2 or 3 eggs (optional)  for "internal decoration" especially made for easter time)

Preparation:

Knead the flour with the oil and sufficient water to obtain an elastic dough, that you will put to rest for at least an hour in the fridge, covered by a cloth. THEN:



Clean and blanch the green beets.

In a bowl combine the ricotta with the yogurt (or simply use same amount of quark), grated cheese, salt and majority and amalgamate everything . If you want, you can add an egg to the mixture to obtain a "more compact" compound (the original recipe does not want eggs, although the final pie will result less compact of course: it is up to you what you prefer!)



Cut the onion and fry a little i a pan with the beets in pieces.
After 10 min, coarsely chop with knife and add the beets to the mixture of ricotta cheese and egg previously prepared ..
Pull out the dough from the refrigerator, divide it in half, spread out one layer large enough to cover a baking pan, pour the mixture of beets and ricotta inside (if instead opt for the original version of the cake with two distinct layers, or, if you want to stick to the original layers: pour the beets. Then, above, pour the mixture of ricotta and yogurt mixed together) .
TRICK: sprinkle some flour on the beets in order to absorb the excessive moisture!
Optional (especially during easter time),  put three eggs as you can see in the photos. spread out another layer of dough prepared with the left dough from the fridge,  cover the pie, and bake for 40/45 minutes until the pie has a golden colour. Eat it cold if....you can wait! But also warm is delicious!

Sciroppo naturale per la tosse fatto in casa! - Natural homemade cough syrup!



Da quando ho scoperto un fantastico sciroppo per la tosse della Aboca, per me non esistono altri sciroppi.
E'naturale, non ha strane sostanze che calmano la tosse agendo sul sistema nervoso, ed è sopratutto EFFICACE. Cioè veramente una mano santa quando non riuscite a dormire per la tosse che vi sconquassa.
Detto questo, e giuro non mi paga nessuno dell'Aboca per fare pubblicità, aggiungo anche che una volta letti gli ingredienti mi sono detta: oh cappero, l'ingrediente fondamentale è il miele....sta a vedere che me lo posso fare in casa??
dopodichè mi sono andata a cercare un sacco di sciroppi fatti in casa e rimedi naturali per la tosse...
li ho "concentrati" tutti in questa creatura che passo anche a voi....
oltre ad essere efficace, non è nemmeno cattiva come certi sciroppi farmaceutici....io vi consiglio di provare! Io ci sto imbibinando il fidanzato :)))

INGREDIENTI
4 spicchi di aglio
acqua
miele
timo essiccato
aceto di  mele
1/2 limone
1 cucchiaio abbondante di olio di girasole

Prendete 4 spicchi di aglio grossi, sbucciateli e fateli bollire con un bicchiere d'acqua finchè l'acqua non si sarà ridotta a un terzo circa. Togliete dal fuoco e aggiungete un cucchiaio di timo secco in infusione. Fate raffreddare e togliete l'aglio. Se volete, potete pure filtrare il timo, a me non da fastidio e me lo tengo. Mescolate all'acqua 2 cucchiaioni di miele (ma se abbondate e ne mettete 3 o 4 non fa male! diciamo che 2 cucchiaioni è il minimo sindacale poi andate a vostro gusto! inoltre metterne di più lo renderà più cremoso e meno liquido) e una tazzina di aceto di mele, il cucchiaione abbondante di olio di girasole e il succo di limone, e mettete in una bottiglietta di vetro. Tenete in frigo e, alla bisogna, agitate bene prima di prendere un cucchiaio o due (o una sorsatina).

Since I discovered a fantastic cough-syrup made by Aboca, for me there is no other syrups.
It is natural, has not strange substances that soothe the cough by acting on the nervous system and is especially effective. That is truly a great help when you are unable to sleep because of a bad cough.
Having said that, and I swear Iam not paid by Aboca for advertising, I also say that once you have read the ingredients you could say: well , the fundamental ingredient is honey....maybe can I do it at home??
Then: I searched for a lot of recipes of homemade remedies for the cough...
I have blended them together in this "creature" that now I'm offering to you...
it is effective, has not even a bad taste like the farmaceutical ones....try and let me know! I have tested on my boyfriend, and it worked! (I can sleep again now!)

INGREDIENTS:

4 garlic cloves
water
dried thyme
honey
apple vinegar
1/2 lemon juice
1 generous spoonfuls of sunflower oil

Take 4 big cloves of garlic, peel them and boil with a glass of water until the water will not be reduced to approximately one third. Remove from fire and add a tablespoon dried thyme in infusion. Leave to cool and when it is cooled down, remove the garlic. If you wish you can also filter the thyme, (it does not bother me and i keep it). Add to this water 2 big spoons of honey (you can add MORE honey, 2 spoons is the minimum but you can add more if you like! to make it more "creamy" and less liquid) and the lemon juice, and a coffee cup (italian espresso!) of apple vinegar, a big spoon of sunflower oil and put the whole into a small glass bottle. Keep in the fridge and, when necessary, shake well before taking a spoon or two to soothe your cough

Torta pere e cacao super soffice senza uova e senza burro - Cocoa and pears cake, super soft and without eggs and without butter






this is a very typical cake we prepare in Autumn, but here it is a lighter version with no butter and no cholesterol!



Ingredients:

300 g flour
1 packet of yeast (15 gr approx.)
120 gr sugar
80 gr sugared cocoa (if it is bitter, add about 50 gr of sugar)
135 ml seed oil
350 ml water
large pears 
pieces of chocolate (as many as you would like: I used 4 or 5 small squares of milk choco, in small pieces)
1 teaspoon of cinnamon powder

mix all the dry ingredients, add the liquids, add the pieces of chocolate and mix with a spoon, then pour into a cake pan and put on it the sliced pears. Dust with cinnamon and bake - 180° for approximately 50 min.  Try with a stick, to check if it is cooked enough, because it may depends on your oven !!!

una torta tipica autunnale, però senza burro e senza colesterolo!

INGREDIENTI:

300 gr farina
1 bustina di lievito (15 gr circa)
120 gr zucchero 
80 gr cacao zuccherato (se è amaro, aggiungete ancora una 50ina di gr di zucchero)
135 ml olio di semi
350 ml acqua
3 pere grandi
pezzettini di cioccolata (io h usato 4 o 5 quadretti a pezzettini di cioccolato al latte che mi era avanzato)
1 cucchiaino di cannella in polvere

mescolare tutti gli ingredienti secchi, aggiungere quelli liquidi, aggiungere i pezzettini di cioccolata e mescolare con un cucchiaio, versare in una tortiera e affettarci sopra le pere. Spolverizzare con la cannella e infornare a 180 gr per circa 50 min ma fate prova stecchino, bello profondo, perchè potrebbero volerci parecchi minuti in più se avete un forno come il mio!!!

Casunziei ampezzani (ravioli ripieni di barbabietola)/ Red beet Ravioli

 In questi giorni stavo pensando a quanto sia importante la fiducia, in qualcuno che
"dice quello che fa e fa quello che dice."

Questi ravioli sono genuini: fanno e dicono quello che sembrano :)

 questa ricetta vi assicuro è superlativa, ed è l'unione personalizzata di almeno 3 ricette differenti, più appunto un tocco personale...

Sono, in parole povere, dei raviolotti a forma di mezzaluna, ripieni di un impasto a base di barbabietola, personalizzabile in vari modi, e conditi in modo molto semplice, con burro, formaggio grattuggiato e semi di papavero.
Una buona ricotta affumicata secondo me aggiunge veramente tanto, rispetto al parmigiano, quindi vi consiglio di procurarvela, anche se la ricetta originale non la prevede...eppure a mio parere profuma di nord-est, dove l'affumicato, si tratti di formaggi o di salumi, è d'obbligo :) insomma, la trovo molto più adatta.
Non fatevi spaventare dalla ricetta, non è difficile per niente! la parte più hard è lo stendere la pasta (per me che non ho la macchina per tirare la sfoglia!), quindi ho detto tutto!!

INGREDIENTI :
(per 4 persone)

Per la pasta:

400 gr farina
2 uova
50 gr latte (o latte di soia)
un pizzico di sale integrale

Per il ripieno:

500 gr barbabietole rosse già cotte
150 gr patate
1 uovo
50 gr pangrattato
burro (quantità a scelta...diciamo da un minimo di 50 gr a circa 100 gr)
un pezzo di ricotta affumicata di capra da grattuggiare (in mancanza: grana grattuggiato)
semi di papavero
cannella
sale e pepe

Impastate la farina con le uova e il latte fino ad ottenere una pasta liscia; formate una palla ed avvolgetela nella pellicola, mettete la palla a riposare in frigo per almeno un'ora.
Fate lessare le patate.
Nel frattempo tagliate a fettine le barbabietole e ponetele in una casseruola con un cucchiaino di burro, fate cuocere un paio di minuti e poi frullate il tutto con il minipimer, dopodichè continuate a far asciugare bene il composto sul fuoco. Dopo qualche minuto, aggiungete un abbondante pizzico di cannella (io avrò messo mezzo cucchiaino, ma io ADORO la cannella, quindi decidete voi la quantità!)
Mescolate il purè di barbabietole con le patate schiacciate, aggiungete un uovo.
Fate tostare il pangrattato in una padella antiaderente, aggiungete un pizzico di sale e un cucchiaino di burro, togliete dal fuoco quando il burro sarà sciolto (toglietelo prima se il pangrattato dovesse mostrare di bruciarsi!). Aggiungere il pangrattato al composto di patate e barbabietole, e aggiungetevi circa due cucchiai di ricotta affumicata di capra.
Stendete la pasta sottile e ricavate dei dischetti con una tazzina da caffè o similia, riempite i dischetti con un cucchiaino di composto e ripiegate il dischetto a metà, a  mezzaluna. Sigillate i bordi.
Mettete a bollire l'acqua con un cucchiaio abbondante di olio (impedirà ai casunziei di attaccarsi) e un po' di sale grosso integrale: appena l'acqua bolle, abbassate la fiamma al minimo (questo impedirà ai casunziei di esplodere o aprirsi per via dello shock termico!) e immergete i casunziei dando una veloce mescolata con un cucchiaio di legno. Quando saranno cotti, scolateli e conditeli con il burro fuso rimanente, una spolverata di ricotta affumicata e una cucchiaiata abbondante di semi di papavero.

In these days I was thinking what is important to build trust in an interpersonal relation, whatever kind.:  when people tell what they do, and do what they tell.

This is a very simple and wonderful recipe, trust me, it will be a success! and it is the mix of 3 different recipes, plus a personal touch :)
 A good smoked ricotta cheese adds really a lot to this plate, as the beets are kinda sweet.



 INGREDIENTS: 
(for 4 people) 

For the dough: 
400 gr flour
 2 eggs 
50 g milk ( or soy milk ) 
a pinch of salt 

For the filling: 

500 g beetroot already cooked 
150 g potatoes 
1 egg 
50g breadcrumbs
 butter ( amount of your choice ... let's say a minimum of 50 grams to about 100 grams ) 
a piece of smoked goat cheese to be grated ( in the absence : grated Parmesan ) 
poppy seeds
 cinnamon 
salt and pepper 

Mix the flour with the eggs and milk until you have a smooth dough , form a ball and wrap in plastic wrap , put the ball in the refrigerator for at least an hour. 
Boil the potatoes. Meanwhile, cut the beets into thin slices and place them in a saucepan with a teaspoon of butter, cook a couple of minutes and then blend it all with the blender or the mixer , then continue to dry the mixture on the stove . After a few minutes , add a generous pinch of cinnamon ( I'll put half a teaspoon , but I LOVE the cinnamon, then you decide the amount !) 
Mix the mashed beets with the mashed potatoes , add an egg.Toast the breadcrumbs in a pan , add a pinch of salt and a teaspoon of butter, remove from heat when the butter is melted ( remove it first if needed to avoid the breadcrumbs to burn !) . Add the breadcrumbs to the mixture of potatoes and beets , and add about two tablespoons of smoked goat ricotta cheese. Or other smoked soft one.Roll out the dough and cut thin disks with a coffee cup or similar , fill the disks with a teaspoon of mixture and fold the disc in half, half-moon . Sealed edges . 
Boil the water with a tablespoon of oil ( to prevent from sticking ) and a bit ' of salt : as soon as the water boils, reduce the heat to a minimum ( this will prevent the casunziei to explode or open by heat shock !) and put the ravioli  giving and stir the water with a wooden spoon. When they are cooked , drain and toss with the remaining melted butter , sprinkle with smoked ricotta and a generous dollop of poppy seeds.

Fragole speziate - Spicy strawberries

La foto orrenda fatta con un cellulare terribile....provvederò a migliorarla! ma ricetta deliziosa e leggera!

INGREDIENTI:

500 gr di fragole
mezza radice di zenzero (o a vostro gusto)
400 gr di ricotta
1 lime (o 1 limone)
3 cucchiai di miele

PREPARAZIONE

Pulite e tagliate le fragole.
MEscolate la ricotta con la buccia grattugiata e il succo di lime la radice di zenzero grattugiata e il miele.
Servite le fragole coperte con la crema ottenuta, e buon appetito!

500 g of strawberries
half ginger root (or different quantity according to your taste)
400 gr of ricotta cheese (or quark)
1 lime (or 1 lemon)
3 tablespoons honey

preparation

clean and cut the strawberries.
Mix the ricotta with the grated peel of the lime and its juice, the grated ginger root and the honey.
Serve Strawberries covered with the cream , and bon appetit!

Rotolo leggero e facilissimo alle fragole - Cheese and strawberries easy and light roll

 Ricetta  "fatta in casa da Benedetta" (che non è la stessa della Tv!!!


Le sue ricette mi piacciono perchè sono semplici, veloci, ben spiegate e poi lei è simpatica!
L'unico appunto è che spesso ci sono ingredienti con olio di palma, o fritture, oppure qualche ingrediente non proprio leggerissimo.
Io infatti la sua ricetta l'ho resa più leggera con il quark al posto della panna montata (il quark ha le calorie di uno yogurt praticamente, ma in Italia lo trovate solo da Lidl) e soprattutto ancora più semplice perchè ho trasformato i grammi in cucchiai...ero a casa del moroso all'estero, e niente bilancia....per cui mi sono attrezzata a trasformare i pesi in cucchiaiate! et voilà, risultato direi perfetto :)

INGREDIENTI:

4 uova
10 cucchiai di zucchero + 3 cucchiai per la farcitura
5 cucchiai di olio di semi
13 cucchiai di farina
mezza bustina di lievito vanigliato (cioè 8 gr di lievito)
zucchero a velo
300 gr circa di fragole
mezzo limone
1 vaschetta di formaggio quark (che ha le calorie praticamente di uno yogurt greco, ma in Italia lo trovate solo da Lidl, in Germania ovviamente si trova ovunque) (se non vi importa la leggerezza, potete sostituire con 1 confezione da 200 gr di panna da montare)

PROCEDIMENTO:

mescolate (possibilmente con uno sbattitore elettrico, se no anche con un semplice cucchiaio, visto che in questa ricetta non è importante far gonfiare l'impasto) le uova con i 10 cucchiai di zucchero, l'olio e la farina, aggiungete il lievito.
Stendete la pastella che ne verrà fuori su una teglia ricoperta di carta da forno. Date una forma il più regolare e rettangolare possibile aiutandovi col cucchiaio.
Infornate a forno caldo (180°) per circa 15 o 20 minuti.
Tirate fuori dal forno, possibilmente togliete dalla teglia  in modo che non continui a cuocere e lasciate raffreddare la torta sulla sua carta da forno.
Pulite e tagliate le fragole, mettetele in padella con mezzo limone spremuto e un cucchiaio di zucchero. Fate cuocere per 3 minuti, spegnete e fate raffreddare.
Mescolate bene il quark con 2 cucchiai di zucchero. SE non trovate il quark, usate la ricotta. Altrimenti va benissimo la panna montata (se non avete problemi di dieta!)
Quando tutto è raffreddato, cospargete la torta con il liquido delle fragole, impregnando bene tutta la superficie. Fate cucchiaino dopo cucchiaino, altrimenti è un attimo usare tutto il liquido per una piccola porzione di torta e renderla "frascicosa" e il resto asciutta-asciutta....dosate il succo!
Poi spalmate sopra il quark lavorato con lo zucchero.
Infine, cospargete il quark con le fragole cotte.
Infine, cominciate ad arrotolare la torta per il lato lungo: arrotolate un pezzettino, staccate la parte corrispondente di carta da forno (verrà via bene, bastsa non essere troppo energici!)
Arrotolate un ulteriore pezzetto, staccate la carta.
Continuate finchè non avrete un rotolo di torta.
Usate la carta da forno per avvolgere il rotolo e mettetelo in frigo per due o tre ore.
Al momento di servire, cospargete di zucchero a velo e decorate a piacere con fragole fresche.
Affettate e ...buon appetito!

The original recipe wants whipped cream instead of quark, but I wanted to make it lighter and especially  easier ...I was in the house of my love abroad, and no scale there.... So I measured ingredients in spoonfuls, very easy way!  Et voila, would say perfect result :)

INGREDIENTS:

4 eggs
10 tablespoons of sugar  + 3 tablespoons for topping
5 tablespoons of seed oil
13 tablespoons flour
half sachet of vanilla-flavored yeast (i.e. 8 gr of yeast)
icing sugar
300 gr strawberries
half a lemon
1 cup of quark cheese (if you do not mind the calories, you can replace with 1 pack of 200 gr whipped cream)


Mix  eggs with 10 tablespoons sugar, 5 Tbsp oil and 13 Tbsp flour, add the yeast.
Spread the batter on a baking pan lined with baking sheet. Shape the batter giving a the most regular rectangular form possible,  helping with a spoon.
Bake in a hot oven (180°) for 15 or 20 minutes.
Let the cake cool down on its baking paper.
Clean and slice the strawberries, put them in a saucepan with half a lemon squeezed and a spoon of sugar. Cook for 3 minutes, then let them cool.
Mix well the quark with 2 tablespoons of sugar. If you do not find the quark, use ricotta or a different NOT SALTY fresh cheese. Original recipe has whipped cream (if you do not have problems with calories!)
When everything is cooled, sprinkle the cake with the liquid of the strawberries, on the entire surface.
Then spread over the quark worked with sugar.
Finally, sprinkle the quark with the cooked strawberries.
Finally, roll the cake starting with the long side: remove gently the corresponding part of baking paper ( don't be too energetic!)
Continue until you will have rolled all the cake.
Use the baking paper to envelop the  roll (tight) and put it in the fridge for two or three hours.
Before serving, sprinkle with icing sugar and garnish with fresh strawberries.
Slice it and ...bon appetit!

i dolcetti di Eva - Sweets bon bons by Eva



RECIPE BY EVE:

INGREDIENTS 

100 gr of dried apricots

200 gr of marzipan

some drops of orange flavoring (you can see the NATURAL RECIPE on this blog!)

Sugar poweder and bitter cocoa powder

Method:

- Blend apricots together with 5-6 drops of orange flavouring (or 1 spoon of natural orange powder)

- Mix everything together with marzipan. Form small balls (9-10 grams each) and if you want

roll them with sugar or the bitter cocoa powder.

- put the sweets in the muffin papers (but this only for decoration!,they are so delicious even without 

that!!!

- eat them or bring them to your voracious colleagues to sweeten their breakfast!

INGREDIENTI:


1 etto di albicocche secche


2 etti di marzapane


Alcune gocce di aroma di arancia (usate questa ricetta naturale del blog!) 


Zucchero a vela e cacao amaro q.b.


Procedimento:


-Frullate le albicocche insieme a 5-6 gocce di aroma di arancia o meglio ancora un cucchiaio di 


aroma naturale fatto in casa.

-Impastate il tutto insieme al marzapane. Formate dei pallini (9-10 grammi ciascuno) e se volete


rotolateli nello zucchero a vela o il cacao amaro.

-Ponete i pallini nei pirottini di carta (ma questo solo per bellezza, sono buonissimi anche senza 

pirottini!!!

-Mangiateli o regalateli o portateli alle vostre colleghe voraci per addolcire la loro la colazione!

mousse au chocolat



This recipe is from Afrodita, a wonderful funny clever book by Isabel Allende about the interrelations between eros and food. She reflects on it and give us a number of great recipes - of course aphrodisiac...
The best I found was the recipe of this mousse au chocolat.
It comes out PERFECT every time, and it is delicious, and a bit lighter than other recipes I tried (well, not good for diet, tho!)

Here it is:

INGREDIENTS:

2 black chocolate bars (I also experimented with white choco, mmmh - very important: black or white. Not milky one!) - 100+100 gr
1 can of cooking cream (or normal cream: WITHOUT sugar!) - 200 gr
2 eggs
2 spoons of water

Melt the chocolate bain-marie (possibly: not direct flame involved). (TIP: never let the water boil, or the chocolate will become too solid).
Add since the beginning the 2 spoons of water. When it is almost all melted, turn off the fire and stir until it is all softened and creamy.
Add the yolks, stir and put it again on the stove for one or two minutes - again, not too long.
Let it cool down. When it is cool, add the cream, stir it well. Apart, beat the egg whites until stiff (you can add a pinch of amid or similar to make it stiffer).
Add it carefully to the chocolate cream, bottom up, and then put in the fridge for at least a couple off hours. Bon appetit!

La ricetta è tratta da Afrodita di Isabel Allende, un divertentissimo e intelligente libro che parla delle connessioni tra Eros  e Cibo. Ovviamente fornendo un discreto numero di splendide ricette afrodisiache.
La migliore delle quali, per me   è questa mousse. Facilissima, viene sempre perfetta. Ed è perfino leggermente più leggera di molte altre ricette provate in passato (certo non è dietetica eh!)


2 tavolettte di fondente (oppure di cioccolato bianco!)
1 confezione panna da cucina
2 uova
2 cucchiai di latte o di acqua

fate fondere il cioccolato a bagnomaria (Trucco: non fate bollire l acqua o il cioccolato tenderà a solidificarsi e raggrumarsi!). Appena è sciolto, toglietelo dal fuoco, aggiungete i due tuorli d'uovo e mescolate, rimettete sul fuoco un paio di minuti e infine fate raffreddare. Quando è ragionevolmente raffreddato, aggiungete la panna e mescolate. A parte, montate i bianchi d'uovo (con un pizzico di amido per farli venire più solidi). Aggiungete i bianchi montati a neve ben ferma delicatamente al cioccolato, con movimento dall'alto verso il basso.
Mettete nelle ciotole, poi in frigo per almeno 2 orette, buon appetito!

Beet with onion chips lebanon style - bietole con chips di cipolle alla libanese




This is a recipe from my friend Hamid - he is from Lebanon and besides being a great constructor, he is an amazing cook! his dinners are famous among us friends, and we beg him to prepare something for us from time to time.
Last time, me being back late at night from Germany, he took me at the station and pampered me with an AMAZING dinner (that we also finished the day after, since I came back to scarf down the leftovers :)
This recipe is the easiest of the dinner, but nevertheless DELICIOUS.
It is quick, healthy, light, fanciful tasty.

INGREDIENTS:
 1 big beet (or 1 bitter chicory)
1 big garlic clove
1 big onion
some spoons of flour
4 -5 full spoons of breadcrumbs (or 1 or 2 slices of black bread, properly crumbed) - (OPTIONAL)
2 spoons of extra virgin olive oil
1 pinch of salt
1 lemon (the juice of)

Stuff the vegetable in very little water (if it is the bitter chicory, better boiling it with abundant water, and then squeeze it well, so that the bitter can be eliminated)
When it is cooked, drain it and add the lemon juice and 1 spoon of oil and some salt.
Apart, squash the garlic and roast it in a pan with a little of oil. Then, add it to the vegetables and mix.
Slice the onion in thin slices, roll them over in a plate with the flour, until they are well covered with flour, then roast them in a pan for 5 minutes with 1 spoon of oil, and add the breadcrumbs at the end if you wat them, and continue roasting another 5 minutes. If you want the onions to be more "crunchy", you need of course a bit more oil to fry them....the result will be less light ;) but they will be crynchy like chips!
Spread the onion slices on the beets with lemon, stir everything and enjoy!

questa ricetta è del mio amico Hamid - il quale è libanese e oltre ad essere un grande costruttore, è anche un cuoco eccezionale! le sue cene sono ormai famose tra gli amici, e spesso lo imploro di prepararci qualcosa di tanto in tanto.
L'ultima volta, mentre ero di ritorno dall'ultimo viaggio in Germania, è venuto a prendermi alla stazione e mi ha viziato con una cena libanese DIVINA (che abbiamo finito il giorno dopo, in quando a pranzo poi sono tornata per spazzolare gli avanzi, non sia mai detto!)
Qeusta ricetta è la più facile di tutta la cena, ma non meno deliziosa!
é veloce, facile, sana, leggera e dal gusto sfiziosissimo!

INGREDIENTI:
1 grossa bietola (a coste va benissimo) - oppure 1 catalogna
1 grossa cipolla
1grosso spicchio di aglio
qualche cucchiaio di farina
4 o 5 cucchiai (pieni) di pangrattato  oppure un paio di fette di pane di segale opportunamente sbriciolate fini (OPZIONALE)
2 cucchiai di olio evo
1 pizzico di sale
il succo di 1 limone

Fate stufare la bieta in poca acqua ( o catalogna: in qeust ultimo caso, fatela bollire in molta acqua e poi strizzatela bene, perchè perda un po' l'amaro). Scolate e aggiungete il succo del limone, 1 cucchiaio di olio e un po' di sale. In una padella, schiacciate l aglio e arrostitelo con un mini cucchiaino di olio, e poi aggiungetelo alla verdura, mescolate bene.
Affettate finemente la cipolla, passatela bene nella farina in modo che sia bella infarinata a fondo, e poi fatela arrostire per 5 minuti con il cucchiaio di olio rimasto e verso fine cottura aggiungete - se lo gradite - il pangrattato o il pane ben sbriciolato, e arrostite per altri 5 minuti. Se volete che le cipolle siano più croccanti, dovete solo aggiungere un po' più di olio e farle proprio friggere  - il risultato sarà meno leggero ;) ma le fettine di cipolla risulteranno croccanti come chips!
Sparpagliate la cipolla sopra la bieta come se non ci fosse un domani, e buon appetito!
