Danubio salato super facile - Danube (homemade fulfilled bread, super easy!)





Ottima ricetta e facile davvero! buona per gite, per merende, per pranzo al sacco, per buffet, per festicciuole...
Mi piace perchè non mi obbliga a prendere una laurea distinguendo la forza delle farine...e poi perchè non mi obbliga a comprare una planetaria, che per me è giusto una specie di macchina che proietta il cielo stellato sul soffitto, o qualcosa di simile...
Ho scoperto che si chiama Danubio perchè in realtà venne copiato da un cuoco calabrese, il quale negli anni '20 aprì una pasticceria a Napoli, aiutato dalla moglie originaria di Salisburgo. Quindi la moglie lo istruì a preparare i butcheln! che erano dei soffici panbrioche ripieni di marmellata.
la tradizione partenopea li ha trasformati nel cosiddetto Danubio salato, cioè panini briosciosi ripieni di formaggi tipici del sud italia e salumi vari.

Stasera ho portato un Danubio alla VHS dove lavoro (una specie di università serale, in italia assomiglia alla Università Popolare che esiste solo in alcune città, per es. a Torino).
Abbiamo fatto una lezione e una piccola "festicciola" mangereccia: io ho portato questo Danubio un po' asciutto per via del forno nuovo, che ho da poco testato. Stiamo prendendo confidenza, io e lui...
Le altre studentesse hanno portato dei biscotti fatti in casa che sono a dir poco DELIZIOSI, e di cui spero di avere presto la ricetta per cimentarmi, oppure semplicemente per scriverla qui. Slurp!

ma andiamo con ordine.
Il Danubio che vedete nella foto ha il ripieno giallo perchè ci ho schiaffato dentro del Cheddar, formaggio che talvolta compro qui in Teteschia.

INGREDIENTI :

550 gr farina
15 gr lievito di birra
1 uovo
250 ml latte
20 gr zucchero
50 gr olio di oliva
10 gr sale
Per il ripieno: Formaggi vari, salumi (anche veg ovviamente), spinaci o altre verdure

Mescola il latte (tiepido ma non caldo bollente!) con il lievito di birra, poi aggiungici l'uovo, l'olio e lo zucchero e mescola. Versa questo liquido sulla farina e impasta. Dopo aver impastato per 5 minuti (pazienza ci vuole!), metti a riposare in una ciotola per due ore, coperto da un panno.
Dopo due ore, àrmati di bilancia: prendi dei pezzetti di impasto e pesali, per avere la certezza che siano tutti grandi più o meno uguali: circa 45 gr l'uno.
Appiattisci e fai un disco di pasta con il mattarello o con le dita: al centro, metti il ripieno che più ti aggrada: 2 o 3 cubetti di formaggio, un pezzetto di salume (veg se ti piace), un cucchiaino di spinaci passati in padella e MOLTO asciutti.
Poi richiudi il disco di pasta e fai una forma di palla, e mettila al centro della teglia.
Ripeti con le altre pallette di pasta (devono essere una ventina in totale), e sistemale intorno alla palla centrale, come se fosse un fiore.
Alla fine, metti in forno per 30-40 min a 180° (forno statico e non ventilato: se usi il ventilato, cuoce più in fretta e asciuga troppo).

Excellent recipe, and really easy!
It iss called Danube, like the river, but it is typical of Naples. I discovered that it is called the Danube because in reality it was copied by a cook from Calabria, who during the '20 opened a patisserie in Naples, helped by his wife: she was from Salzburg. Then it was probably thanks to his wife that he learned how to prepare the butcheln! Butcheln were exactly these fluffy brioches filled with jam.
The neapolitan tradition has them processed in the so-called salty Danube , soft fufffy sandwiches stuffed with typical cheese and hams from southern Italy.

Tonight I brought this Danube to the Popular University where I work. I filled it with spinach, ham and cheese.
We did a lesson and then a small "eating celebration": I brought this Danube, while the other students had prepared delicious homemade biscuits,  I hope to soon have their recipes to experiment! Slurp!

But we go with order.
ps. the yellow you can see inside the Danube, is CHEDDAR (not egg, like someone guessed!)

Ingredients :

550 g flour
15 gr yeast
1 egg
250 ml milk
20 gr sugar
50 gr (olive) oil
10 g salt

For the stuffing: various cheeses, salami (veg or not, depending on the taste), spinach or other vegetables

Mix the milk (lukewarm but not boiling hot!) with the yeast, then add the egg, the oil and the sugar and mix everything. Pour this liquid into the flour and mix. Work the dough for 5 minutes (patience is needed!), put to rest in a bowl for two hours, covered by a cloth.
After two hours, take a scale: take pieces of dough so that they are all the same measure, more or less 45 gr each.
Flatten every piece of dough, make a disk with a rolling pin or with your fingers: in the center, put the filling that you like most: 2 or 3 cubes of cheese, a piece of salami (veg if you like), a teaspoon of strained spinach in the pan (they need to be very dry).
Then close the disk, giving it the form of a ball; put it at the center of the pan.
Repeat with the other balls of pasta (they should be around twenty balls in total), and put them around the central ball, as to create a flower.
Put the flower in the oven for 30-40 min at 180° (static oven and not ventilated: If you use the ventilated, it will cook faster but it will get dry).

Torta cremosa e umida di mele - facilissima! - Moist and creamy apple pie - super easy!

La vita in Germania non è sempre facile. Scopri per esempio che la burocrazia è pure peggio che in Italia (però, quando scrivi una email a un ufficio pubblico per dire che hai perso l'importantissimo documento che avevi ricevuto via posta due giorni prima, ti rispondono la mattina dopo dicendoti che ti hanno appena inviato la seconda copia.

Scopri che tutti i luoghi comuni sul cibo tedesco sono tendenzialmente veri, anche per te che hai sempre difeso strenuamente il valore delle differenze, rifiutandoti di dire che la cucina italiana è la più buona del mondo, perchè non è vero.
Epperò, diciamocelo, cominci anche a rivalutare questo luogo comune, e in effetti qui non è che il cibo sia poi così vario e godurioso...
però scopri qualche fantaaaaastico ristorantino con tipico cibo svevo:  non brilla per varietà, i piatti sono sempre quelli (pochi),  ma in Italia è un po' la stessa cosa no? se vai sempre nelle trattorie regionali! quindi, piatti ripetitivi, sì, ma il cibo è buono e goloso!
Certo i vegetariani qui non hanno vita facile. La carne la fa da padrone....

Scopri che anche se siamo nella brianza tedesca, non girano solo soldi ma la cultura c'è se la vai a cercare. Anche se le città sembrano girare, a un primo sguardo superficiale, solo intorno a industria e produzione.
Ho trovato le maratone di lettura di Umberto Eco organizzate da un centro culturale per il prossimo anno.... in tedesco naturalmente! speriamo che il mio nuovo corso mi aiuti a seguirne almeno un po'.
In realtà io avrei sempre desiderato imparare il tedesco per poter leggere in originale il mio scrittore (all'epoca) preferito, Thomas Mann.
Oggi che sto imparando il tedesco davvero, le mie ambizioni si sono ridimensionate, e se riuscissi a leggere le istruzioni per avviare la lavatrice sarebbe già un gran successo.
Ma vabbè.

In tutto questo, il mio rapporto con la cucina si sta modificando. Sarà che mi guardano (pure a casa!) come una marziana per il tempo che passo in cucina, o per meglio dire: passavo.
Sarà che alla fine ho un sacco di cose da fare, e spesso, visto che abito un po' fuori città ,se esco alla mattina per una commissione e devo tornare in centro nel pomeriggio, e magari fare lezione fino a sera, non passo dal via (cioè da casa) nè a pranzo nè a cena.
Insomma, diciamo che "sto uscendo dal tunnel", e mi sto addirittura convertendo al cibo pronto (ovvove!) o meglio, diciamo, semplificato. Per avere più tempo per il resto.

va beh, dai, forse sto esagerando: per una volta che ho comprato i maultaschen già pronti! (specie di rotoloni di pasta avvolta a spirale con in mezzo un ripieno di spinaci e formaggio (una sorta di cannellone)...
Però qui, davvero, se ti invitano amici a cena, la normalità è trovarsi nel piatto qualche surgelato bofrost. Però nessuno sta troppo dietro ai fornelli, mi pare di capire: l'importante è godersi la giornata e il tempo con gli amici, molto più che non mangiare insieme. Insomma, la filosofia non è mica male.
Quasi quasi mi converto. Anche la parte relativa alla scoperta dei ristorantini non mi dispiace affatto.

Però so che riprenderò con più calma. E comunque, almeno una o due ricette alla settimana le provo.

Questa volta, è toccato alla torta di mele. A me non piacciono le torte "panose" come le chiamo io, cioè alte e soffici, asciuttine, lievitate per bene. Proprio no. Mi paiono pane dolce da pucciare nel latte, e io latte non ne bevo. Non mi piacciono le torte asciutte e ben lievitate, in genere.
Però tempo fa avevo assaggiato una torta di mele DIVINA, piena di mele, bagnaticcia e umidiccia come piace a me la torta.
Non buona come le torte di mele francesi, basse e umidissime, ma cmq ottima davvero.
Ho perso la ricetta....ma piùù o meno la ricordavo.
é una torta di mele cremosa, cioè non vi preoccupate se, dopo un'ora di cottura in forno, la tagliate e trovate dell'umido o addirittura un po' di impasto che cola cremoso fuori. é normale. E' cotta (1 ora a 200 gr in forno e sfido a dire cche è cruda) ma resta cosi, grazie all impasto assai liquido e all'esagerata presenza di mele che tengono insieme la crema e l'involucro cotto.
Molto buona :) anche come dopocena.
A me fa impazzire calda, magari con gelato o panna liquida o yogurt.
Ma anche fredda è assai bona. E reesta cremosa!
la prossima volta provo con la stevia...

INGREDIENTI:

2 uova
110 gr zucchero
130 gr farina
1 bustina di lievito
cannella come se non ci fosse un domani (per me, voi mettetene pure meno)
5 o 6 mele belle grosse
300 ml latte
30 gr burro

Montate le uova con lo zucchero fino a farle diventare belle spumose e chiare.
Aggiungete il latte, e continuate a montare.
aggiungete il lievito e la farina e continuate a montare. 
Fate sciogliere il burro e quando è un po' raffreddato aggiungetelo, continuando a montare.
Aggiungete cannella a piacere, e infine le mele tagliate a fettine sottili.
Mescolate, e mettete in uno stampo. Cuocete in forno a 200 ° per 50 o anche 60 minuti.
togliete dal forno e lasciate raffreddare.

Life in Germany is not always easy. For instance, bureaucracy is also worse than in Italy (however, when I wrote yesterday an email to a public office to inform that I had lost that very important document that they sent me by mail two days before, well, today I already received an answer, telling me that they had just sent me again the copy).

I am discovering that all the common clichè on the german food is basically true, despite the fact that I have always defended strenuously the value of the differences, rejecting who said that Italian cuisine is the best in the world, because it is not true...but then..., let's face it, here cuisine is not a great stuff.
However, I discovered some fantastic little cozy restaurants with, for example, typical Swabian food, which does not stand out for variety (always the same dishes eh, but in italy it is not so different, in the traditional trattorie!) but it is delicious.

for sure, vegetarians here do not have an easy life. Meat is everywhere.

I am discovering that even if we are in "german Brianza", you can find cultural  events.
I found the reading marathons of books by Umberto Eco for next year....clearly,  in German language, of course! I hope that my new german language course will help me to follow at least a little bit. And anyway, I planned to give a course of italian literature for the next year, and it will be also around Eco, but in italian! :) for my italian learners.
Actually, I always wanted to learn german because of my passion for Thomas Mann, I always wanted to be able to read him in his original language.
Now that I really started to learn german, my ambitions have been come back to right perspective: it would be a great success to be able to read the instruction for the washing machine.
Anyway.

In all this, my relationship with the kitchen is changing. Maybe 'cos I noticed that germans look at me as an alien, since I effectively USE the kitchen to cook (microwave apart), or maybe because I have a lot to do and to discover, well: I stepped back a bit, converting to ready-already-made-food (hovvov!) or, at least, simplified. In order to have more time for all the rest.
Here, if you are invited by friends for dinner, the normality you can expect is normally frozen food. However, None bothers with the stoves, and then we all have time to go to stroll.
Not a bad approach, I would say, I am appreciating this more and more.
Also the restaurant discovery part. I like it.

But I know that I will come back to cooking with more calm. And anyway, it is not that I completely stopped.
At least one or two recipes every week, I still try.

This time, it was the time to try another apple pie. I do not like the "bread-ish" cakes, i.e. high and fluffy, dry, leavened dough.. not for me, no. They seem to me just as sweet bread for milk, and i do not drink milk.
However some time ago I tasted a cake which was YUMMM, with apples, full of apples, moisty and sweat as I like the cake to be.
Not as good as some french apple pies, low and wet, but really excellent.
I lost the recipe....but I remembered.
It is a waffle creamy, so do not worry if, after an hour of baking in the oven, you'll cut it and you'll find the damp or even a bit of dough leaking out as a cream.
It is cooked, but the liquid dough and the enormous quantity of apples will keep it creamy and wet.
Very good :) also as after dinner.
To me it is delicious hot, perhaps with ice cream or liquid cream or yoghurt.
But even cold is very good. And creamy !
next time I 'll try with stevia...

Ingredients:

2 eggs
110 g sugar
130 g flour
1  baking poweder (16 gr)
cinnamon as if there were not a tomorrow (as much as you like, ehm)
5 or 6 very large apples
300 ml milk
30 gr butter

Beat the eggs with the electrical egg beater. Add the sugar until they become fluffy and clear.
Add the milk and keep beating
add the baking powder and flour and continue beating.
Melt the butter and when it is a little cooled add it, continuing to beat
Add cinnamon powder, and finally apples cut into thin slices.
 put everything into a mold with baking paper. Cook in the oven at 200 ° for 50 or even 60 minutes.
Remove from the oven and  cool.
