To improve my language skills, I joined a few weeks ago a couple of Stammtisch - a group of people who meet up around a table in a pub (kneipe) or wherever, to share drinks, food and chats. While reading the language is not so INCREDIBLY bad (still bad, tho), listening and above all PRODUCING spoken language, is another story! (that's what I want to improve).  Switching to english or other languages, is the rule, sigh- luckily, ppl are really nice with "learners" like me :D ).
During my first Stammtisch, I was offered these small sweets by Eva (Efe), who is originally from a little village between Köln and Frankfurt. The first time I tasted those nice sweets I was really not far from her place, so I could remember them and I asked Efe for the recipe, SLURP!!! She challenged me to pronounce the name Nussecken and when I did it   she seemed surprised, (OH YES I did. No surprise: it is a food word. Worth of all my attention :)))
Thanks Efe for sharing them!

Talking about music:
It is a while since I have posted music here on my blog. In this period I have listened to a few live concerts in outstanding locations  .....very very particular uncommon ones.
Ever enjoyed Bach, Piazzolla, Vivaldi, kletzmer music and more....in a Pantheon on a hill, in the middle of a wood surrounded by thousands statues? while the concert was played by 5 accordions, one oboe,  one sax? NO? well, I can tell you it was a great experience!

But the best was two days ago, when I listened to a concert in a magnificent church (worth of amazing pics I must say). And the music was written by my passion, my favourite composer of all times. Vivaldi.
I will leave you then with the same music I listened to in the church, the GLORIA, which is apt to give you the right spark to cook these glorious Nussecken. :)

His music always reminds me of a sentence by Nietzche

"everything divine runs with light feet"

Vivaldi's music is divine, for sure.
And only a unique place, full of beauty like a floating dream - Venezia, could give birth to (and influence) such a remarkable composer.  Speaking of beauty: i.e. take a look to this superb tiny fabulous book shop: can you imagine anything more ravishing, ancient, captivating messy and alive? It could only be in Venice, right? :)

This GLORIA I think is one of the most accurate versions, here: in this gorgeous BBC video, the performers are all female, as it should be. In fact, Vivaldi worked for almost 40 years at the gilrs'orphanage Ospedale della Pietà in Venice. Much of his music was written for the all-female orchestra and choir of the orphanage. Performers at La Pietà would have stood behind screens on the balconies, so as not to distract the congregation.
(I still fondly remember the first concert I attended at La Pietà, I was 15 years old, it was my first holiday without family)

Down here, there is an interesting bbc documentary about my beloved red priest, whose life and personality, as well as his music, neves cease to charm me.
Take a look and enjoy the description of his genius and his 4 seasons, with the birds, the thunders, the dog...

"he was composing straight from his head, onto the page, with basically no second thoughts and no mistakes at all".
"He wrote passionate, dramatic, dangerous music - you know,  if J.S. Bach was the Beatles of that era, Vivaldi was the Rolling Stones".
Needless to say. He was italian. :D
"His music is orgasmic" - oh, I agree

INGREDIENTS:

Ingredients for the shortcrust:
take a look  here if you want to try the pastry without eggs and butter.
Otherwise:

350g flour
180g butter
80 g sugar
grated rind of 1 lemon
3 egg yolks

work the ingredients to make a smooth ball that you will put it in the refrigerator (possibly wrapped in foil).

Ingredients for the mass of hazelnuts:
200 gr. butter
200 gr. sugar
4 tablespoons water
2 tsp vanilla sugar (if you want)
200 gr. chopped hazelnuts
200 gr. ground hazelnuts

plus: 4 tablespoons apricot jam (I would give a try to orange one) and 100 gr. chocolate glaze

Pastry: mix the ingredients into a smooth dough, refrigerate for at least an hour
Hazelnut mass: melt butter in a pot, sugar, vanilla sugar and water over medium heat until golden brown (do not boil, otherwise sugar will burn on the bottom of the pot and then who cleans ???). Add chopped hazelnuts and ground. Allow it to cool a bit.
Meanwhile, roll out dough on a baking sheet greased and floured (or covered with parchment paper), spread over the jam and then add the hazelnut mass. Make it flat with a wet knife.
Bake in preheated oven at 180 ° C for 25-30 minutes.
When the pan is a bit chilled, cut in triangles and cool it completely.
Melt the chocolate icing in a double boiler, and put 1 or 2 corners of the sweet in the melted chocolate, and leave to cool further on a rack oven.
Guten Appetit!

Inutile dire. Era italiano. : D

Fatto, buon apettito

Crema di zucchini meravigliosa - Zucchini magical soup thai style

In this period  the zucchini are everywhere, so, you MUST try this  WONDERFUL CREAMY SOUP!
My friend Adriana gave me the recipe, one evening I went to visit her in the countryside
She proposed to prepare that for dinner but I was skeptical.....I was hungry and this recipe looked a bit "poor" and sad....but!

Shortly after trying it, I was licking the pot, begging my friend to get the recipe and asking her permission to publish it on the blog in imperishable memory ...
It 's OUTSTANDING! rice milk gives it a vaguely thai flavour... wonderful!

ps. in the photo, made with a horrible old mobile phone, the cream looks green, while actually is yellow-orange because of the turmeric!

Especially these days, I am very grateful to life for the joys that I live everyday. And the amazing luck I have. Which I actually built. I congratulate myself. And I know my limits , which I create by myself , when I still do so

There's still a lot to do. But  " das wichtigste" now, is that I'm happy. :)

INGREDIENTS:

1 kg zucchini

2 medium onions

2 stalks of celery

2 carrots

1 lt of rice milk

1/2 teaspoon turmeric

fresh herbs (thyme, mint, rosemary, sage, parsley,  what you have!)

a couple of tablespoons of olive oil

a few tablespoons of roasted sesame seeds

salt

Peel about half the zucchini and cut the peels into rather small squares .
Fry them in a pan with a tablespoon of olive oil until they become cooked but still crunchy ...
In a pan, fry the chopped onions with the chopped celery and the chopped carrots. Add turmeric (frying and warming it will unleash its aroma) and the chopped herbs. After about 10 minutes, add the pieces of zucchini (the ones you peeled and the ones you did not peel). Cook for a few minutes, then add the rice milk and season with salt. Cook over low heat for a quarter of hour- twenty minutes, then use a blender and mix everything.
Serve hot, and put on it some "crunchy conches"  and sesame seeds

Bon appetit!

INGREDIENTI:

1 kg abbondante di zucchine

2 cipolle medie

2 coste di sedano

2 carote

1 lt di latte di riso

1/2 cucchiaino di curcuma

erbette fresche (timo, menta, rosmarino, salvia,
prezzemolo, tuutto quello che avete!)

un paio di cucchiai di olio

qualche cucchiaio di sesamo tostato

sale

Buon appetito!

Crostata di ricotta - Ricotta tart

I challenge you to be bold. Be who you are. Embrace vulnerability.
Invest in a relationship without knowing if you’ll get your heart broken
Tell people your greatest fear
Say I love you first
Start a business that might fail
Do something that matters to you, no matter how unlikely the outcome
Share who you really are
You’re right, all of the toughest emotions in life come from putting yourself out there – fear, loneliness, shame, unworthiness, inadequacy, you name it.
But this same vulnerability is also the only place where you can find true love, connection, creativity, belonging, joy or a life that truly means something.
You can’t have one without the other.
Decide to be open.
Show the world who you really are.
Watch what happens.

ps. My Facebook page has reached 200 likes! considered that I cook so little (and so little  also post...) recently .... thanks a lot!!! <3 <3 <3

pps. This summer I will be in Tuscany for a week, I will conduct a meditation-yoga workshop.. . Should you pass over there ....

..............................
------------------------
"I lie in bed awake at night thinking "thank you god for letting me live this long, I ve just had a lot of serious shit happen to me in my life, and I really get it now that this doesnt last and I m no different from anybody else. Yes, indeed it will happen to me. It is happening to me a little bit each day. and that doesnt freak me out. if anything, it s liberating.
(it s all going by so fucking fast.)
so would you change anything? like who you're with or what you do or what kind of person you are? because if you do, do it now. this is all we have, right here right now. "
(Six Feet Under)

PASTRY:

400g flour
200g butter
150 gr sugar
3 egg yolks
1 whole egg

FILLING:

500g ricotta cheese
2 eggs
2 tablespoons sugar
100g raisins
candied orange peel (optional) (or, if you do not love them, use drops of dark chocolate and a little bit of orange essence)
grated lemon zest

Mix well the flour with the sugar. Add the chunks of cold butter and the eggs, and mix quickly. Put the dough it in the refrigerator while you prepare the filling.

Mix the ricotta with the sugar until it becomes creamy, then add eggs, raisins and candied orange peel (if you do not love, you can add drops of dark chocolate with a little orange essence in the cheese)
NOTE: if you use the typical chocolate chips that you buy at the shop, ok, they will not dissolve while the cake will be baking. But if you use a normal chocolate bar and chop it yourself, you'll have to be careful because they will tend to melt in the oven: in order to prevent that, put the crumbs of chocolate in the freezer for at least half an hour before use, they will melt a little less. You also will dust them with a little flour before using them, in order to have them well scattered and not only sinking on the bottom of the cake)
ANYWAY I recommend the orange peel because with ricotta there are so supremely good!

Add the lemon zest and stir.
Spread a first layer of pastry, cover with the filling, then put another layer of pastry or put strips of dough (depends on how much dough is left).
Bake at 180 degrees for three quarters of an hour (always depends on your oven, always give an eye to check.... I have a very old gas oven, and I know how it works now, but I know that most of you have electric ovens and I do not know .... you just have to try !)
Cool the cake well, then refrigerate to cool it further and then ... bon appetit!

----------------------------------------------------------------

Ti sfido a essere audace. Sii chi sei.
condividi chi sei veramente

Raffreddate benissimo, poi mettete in frigo a raffreddare ulteriormente e poi...buon appetito!

Torta paradiso all'arancia senza glutine e ...multidimensionalità - Orange sponge cake gluten free and ...multidimensionality

In our society, most of us become one-dimensional people,
and are always the same kind of person, because we
BELIEVE that we are only one kind of person.

Most ppl are One-dimensional

And we are RAISED to be one-dimensional at school,
and often by our family and peers.

People always ‘BOX’ us in to one category and
limit us to one identity.
That is true for women, but for men too.
For example: we (women) are the sexy one, the quiet one,
the ’gentle, kind-hearted’ one. The daring one.
The ‘smart’ one. The ‘elegant’ one. The shy. The intellectual.
The light hearted. The adventurous one.
Such a bore! And ok, I am easily bored....but....
But the truth is that you are a lot more than just
that. You are a lot more than JUST elegant, for
example.
Same for men: they are the bold one, OR
the intellectual one,
OR the funny one, or the sexy one....groan!
why just one side?!
And often, if we do something that’s slightly
different than what we normally do, people or our
“friends”, are all like: “you’ve CHANGED“. (in
that dreaded negative tone, like changing is the
most evil thing in the world).
Most of us become one-dimensional people,
and are always the same kind of person, because we
BELIEVE that we are only one kind of person.
And as a result, it’s incredibly hard and feels
unnatural’ to be multi-dimensional.
I am light feminine AND dark feminine.

Don't let others in-box yourself, and do not restrict anyone as well.

INGREDIENTS:

150 potato starch
150 cornstarch
8 egg yolks + 4 egg whites
1 teaspoon baking powder
300 gr sugar
the peel of an orange (or two)
300gr butter
vanillin

Stir 150 gr sugar, the vanilla and the butter until it gets all light colour and soft, then add the orange peel (or two).
Whip the eggs until they are firm with 4 three or four drops of lemon (NOT with a pinch of salt, it will make the meringue unstable!), if you want them really firm you can add half a teaspoon of cornstarch or potato starch while whipping them. Add the remaining sugar and continue beating.
Stir yeast and starch, and add gradually them to the creamed butter and eggs. Gently incorporate the egg whites into the mixture of butter and eggs. Stir gently from the bottom up.
(With the remaining egg whites you will make a nice omelette or a meringue!)

28 cm cake tin covered with baking paper: bake at 180 degrees (preheated oven) for about 50 min.
Let it cool, and then.... Bon Appetite!

-----------------------------------------

quello intellettuale, o quello simpatico, o quello sexy .... bah!
(In

INGREDIENTI:

Torta margherita (o paradiso) all'arancia:

150 fecola patate
150 maizena
8 tuorli, 4 albumi
1 bustina lievito
300 gr zucchero
la buccia di una arancia
300 gr burro
vanillina

Buon appetito!

50 shades of brown (cocoa!) the perfect and easiest Sponge Cake without gluten - 50 sfumature di cioccolato - il perfetto e più facile pan di spagna senza glutine

Everybody talks about the movie and the book 50 shades of gray, 50 shades of black and then 50 shades of red. Never read and never watched - and will never do. Life is too short to spend time reading bad books or watching stupid movies.
Fact is that everybody talks about sadomaso-sex.

Have you ever had any extreme experience in bed? Probably, the only really extreme hard experience in bed you had, happened while you were trying to take off your underpants, and  you fell hard out of bed on the floor. Very hard.
I bet the only occasion you had a whip in your hands, was just to prepare whipped cream or mayonnaise, huh? And the only thing that you have tied up with a string in your whole life was the roast, right?Naked truth. I know.
Anyway.
This is the story, they say: Cristian Grey, rich and so cool, falls in love with Anastasia Steele, a poor but beautiful girl. And he gives her a multicolor hell.
He whips, spanks, and hangs her like a sausage in the cellar. And she seems to like it.

Why? Because women, especially the "regular" ones, have the secret dream of a husband that turns them upside down like a sock. Especially when their real husband is a sort of jellyfish who makes love once every equinox. Who thinks that Clitoris was a greek philosopher. Ectoplasm who, after 9 o clock, looks like the same shape of the sofa. Who slaps her bum when she has a mosquito on it. Clearly, if you compare such a husband with someone who puts you through the wringer and then gives you diamonds as a gift, well, you think "after all, why not?!"
Especially when your loved half is snoring with the remote control still in his left hand as a prosthesis, you think, ok, after all I might let someone pull my hair once in a while, why not ...

But unfortunately Cristian Grey is a mentally disturbed stalker, but nevertheless, it seems that there is a happy ending as well (sorry for spoiling, but hope you will never watch it).
They marry and give birth to two children. And it seems that their super-hot- activity-in-bed keeps on, hotter than ever. Wooooah.
Is that possible, after two children? Or afterwards is it possible only "50 shades of shitty brown"?
Groan.

Sorry for that. But here we oooonly talk about chocolate.
A very easy "pan di spagna" made with cocoa, for every gluten intolerance.
This is the "cold method" (there is also a "warm method" but it is a bit more complicated :D although with the COLD method, the cake will be more compact, while with the warm one will turn higher and softer)
This cake is perfect to be cut and filled with cream - choco cream as in my case, or other creams, like ganache. It is soft and spongy. Someone also adds butter, and it is more tasty, but it is not pandispagna anymore. We will see next weeks :)
If you do not want to fill it with any cream, it will be perfect for breakfast, with cappuccino or coffee, or maybe for dinner, with some red fruits and some syrup made with red fruits, water and sugar... let your wild fantasies run while whipping those holy albumens! ehm...!!! :D

I used this cake as one layer of a decorated cake. The other one will arrive soon on the blog (it was a kind of Paradise cake with orange and syrup, and a choco cream inside.)
The pic is awfully taken with a bad mobile phone, but the comments have been enthusiastic:
"" The cake was marvellous..good, soft taste just the way I like it ..and the decoration was great, warmly thank you, it is A plus, and I can assure I tasted a lot of gluten-free cakes " ehehehe

INGREDIENTS:

(summary: for each egg, 30 gr of flour or starch. Replace 50 gr flour/starch with 50 gr of cocoa)

(diameter: 24 cm)

5 eggs (room temperature, that is very important!)
150 gr sugar
100 gr cornstarch or potatoe starch (or half and half!)
50 gr cocoa

Eggs must be at room temperature because, if cold, they wouldnt be able to incorporate the air that is needed to make the cake soft and spongy!
Whip the yolks with the sugar until they become light yellow: the more air you will incorporate inside, the more soft the ccake will be. Not too much tho, otherwise it will ccrumble!, then you can add some vanilla or vanillina extract.
Then Whip the albumens : they have not to be whipped stiff peak, but only firm: if it is TOO firm, it will not blend well with the yolks .
Then add the albumens to the yolks, gently fold in a circular motion, down one side of the bowl and up through the centre, turning the bowl slightly after making the folding motion, so that the mixture will not wilt.
then add the starch (or flour): be delicate so that the mixture will not collapse!
Oven: 180° for 40 min. NEVER EVER open the oven before 30 minutes! or it will collapse.
After 30 min, you can try to see if it seems cooked: try with a toothpick: if it remains dry, the cake is ready. If not, it will need further minutes in the oven.
When the cake is ready, turn off the oven and let it cool down inside the baking pan.
