Creamy chestnut soup from Galicia (Spain), italian movie and Chtulhu - Zuppa vellutata di castagne (Spagna), un film italiano e Chtulhu

"The most merciful thing in the world, I think, is the inability of the human mind to correlate all its contents. We live on a placid island of ignorance in the midst of black seas of infinity, and it was not meant that we should voyage far. The sciences, each straining in its own direction, have hitherto harmed us little; but some day the piecing together of dissociated knowledge will open up such terrifying vistas of reality, and of our frightful position therein, that we shall either go mad from the revelation or flee from the deadly light into the peace and safety of a new dark age."

H.P. Lovecraft, "The Call of Cthulhu"

A clever description of human mind and of what is happening in our mad world. Wherever, whenever.

------------------------
two videos today!
a light, wonderful one, perfectly put together!

the second video is taken from an old italian movie (english subtitles), and it is about a "lord of war" coming home, facing a family who has just "discovered" his real job.....Look at the reactions, and think.

And now:
A spanish recipe given by a german friend from a book written in english. Quite international LOL!

350 gr peeled chestnuts (you can also buy them dried and then boil them)
salt and freshly ground blac pepper
1 thick slice bread
4 tbsp olive oil
1 tbsp red-wine vinegar
700 ml veg-stock
1/8 tbsp cinnamom

Toast the bread and then blend it (the recipe says "fry it in olive oil then blend it" but we are on a diet, arent' we?) and purèe it with the vinegar. Reserve a handful of coarse nuts (chopped) to add texture to the soup and blend the rest with some veg-stock. Purèe to a cream. REturn the cream soup to the pan, taste and season it with salt and pepper. Flavour discretely with cinnamom. Add the chopped nuts, heat through and serve. Bon appetit!

..............................................

Ovunque e in qualsiasi momento.

Bon appetit!

DELICIOUS cold borscht soup (šaltibarščiai) and Vivaldi again! - Deliziosa zuppa borscht fredda (šaltibarščiai) e ancora Vivaldi!

The following song gives me tingles all over my body :)

I dare you to find another piece so beautiful like that.... isn't it perfection?
The languorous sound is given by the damper used by the arcs. You can really listen here to the majestic expressive capacity of Vivaldi in painting words with music (this is the psalm 126 normally performed during Vespers) . I find also amazing how the word "Somnum" (= latin for "sleep") is accompanied by a rocking rhythm and languorous sound, so expressive.....

"Cum dederit dilectis suis somnum:
ecce haereditas Domini, filii:
merces, fructus ventris."

But also the following is amazing:
Here is the story: a woman has been cheated. The music and her voice express all the anger she feels at first. Afterwards, a moment of afterthought, of illusion, of nostalgy and love - she still cries over her broken love illusion, considering the chance of forgiving him once he will be back....but quickly her emotional state changes again in a blink, she's again overcome and overwhelmed by anger and by anxiety again,  you can definitely tell that by hearing her mad voice! she sings like she could barely breath...amazing! and Romina Basso is great!

here the lyrics in italian:

Se lento ancora il fulmine
l'oltraggio mio non vendica
cadra quell'empio, vittima
del giusto mio furor.
Ma sposa ancor ti sono
ritorna e ti perdono;
occhi versate in lacrime
tutto l'affanno d'un tradito amor."

and the English translation:
"
If the lightning is still slow
To avenge the outrage I have suffered,
Soon that wicked man will fall victim
To my just anger. Wicked! Wicked! Wicked!

But I am still your wife:
Come back, and I will forgive you.
My eyes, pour forth in your tears
All the affliction of betrayed love ."

You already know I am crazy for Vivaldi! but a friend who is also fond of Opera really fancy going to La Scala in Milan  and whatching a proper opera..
Many years passed since I watched the last opera in my life (apart the ones I saw during my secondary school, I remember a wonderful Carmen in Turin). But I have never been really fond of it. I think it might be an interesting experience, now....
For sure,  stuff like Beethoven or Schumann is not my thing at all, I always found them a bit "boring" ok, but maybe Puccini might meet my taste, so we will try :))))

*******************

For now, a wonderful recipe for a cold soup that I tried during my last long travel. I tasted it many times, and Arthuras prepared this to me. Thanks Arthuras, my wonderful couchsurfer host in Klaipeda! Of course, it is better in summer, but I really think it might be appreciated with any climatic condition, especially in autumn, since it is TOO GOOD! DO NOT BE SCARED BY THE COLOUR!! I never liked red beets, but....but!!!! you might think quite the opposite while reading my blog, since I have put a few recipes with red beet actually! But the fact is, red beets ALONE are baaaaad, but if prepared in the right way, they are amazing. Trust me and try this!

INGREDIENTS:

2 cucumbers (optional, I never use it, but in the traditional recipe it is required)
5 spring onions/OR  2 tablespoons of chives or, as I do, 1 white onion in small cubes
2 hard boiled eggs (required in the traditional recipe but I do not put them, to make it lighter)
1,5 lt kefir OR - OR 200gr quark + 400gr natural yogurt+500 ml milk
fresh dill (very important! if you cannot find it, use it dry)
2 big boiled beetroot
salt
a couple of boiled potatoes

If you want cucumbers, chop them in small cubes, with their peel.
Grate the cold beetroots using the biggest holes and, in a large bowl, mix them with the quark and milk and yougurt (kefir better, but if you cannot find it, use the other options I wrote).
Stir everything, adding the eggs and the cucumbers if you want, the chives or onions and the salt.

Peel the potatoes and serve them apart, as they were toasted bread to add to the soup.
Enjoy!

Fantastico pezzo!

Seguite il testo in italiano:

Se lento ancora il fulmine
l'oltraggio mio non vendica
cadra quell'empio, vittima",
del giusto mio furor.
Ma sposa ancor ti sono
ritorna e ti perdono;
occhi in lacrime versate

aneto fresco (molto importante! Se non riesci a trovarlo, usalo secco)
2  barbabietole rosse già bollite
sale
2 patate bollite (opzionale)

In this period  the zucchini are everywhere, so, you MUST try this  WONDERFUL CREAMY SOUP!
My friend Adriana gave me the recipe, one evening I went to visit her in the countryside
She proposed to prepare that for dinner but I was skeptical.....I was hungry and this recipe looked a bit "poor" and sad....but!

Shortly after trying it, I was licking the pot, begging my friend to get the recipe and asking her permission to publish it on the blog in imperishable memory ...
It 's OUTSTANDING! rice milk gives it a vaguely thai flavour... wonderful!

ps. in the photo, made with a horrible old mobile phone, the cream looks green, while actually is yellow-orange because of the turmeric!

Especially these days, I am very grateful to life for the joys that I live everyday. And the amazing luck I have. Which I actually built. I congratulate myself. And I know my limits , which I create by myself , when I still do so

There's still a lot to do. But  " das wichtigste" now, is that I'm happy. :)

INGREDIENTS:

1 kg zucchini

2 medium onions

2 stalks of celery

2 carrots

1 lt of rice milk

1/2 teaspoon turmeric

fresh herbs (thyme, mint, rosemary, sage, parsley,  what you have!)

a couple of tablespoons of olive oil

a few tablespoons of roasted sesame seeds

salt

Peel about half the zucchini and cut the peels into rather small squares .
Fry them in a pan with a tablespoon of olive oil until they become cooked but still crunchy ...
In a pan, fry the chopped onions with the chopped celery and the chopped carrots. Add turmeric (frying and warming it will unleash its aroma) and the chopped herbs. After about 10 minutes, add the pieces of zucchini (the ones you peeled and the ones you did not peel). Cook for a few minutes, then add the rice milk and season with salt. Cook over low heat for a quarter of hour- twenty minutes, then use a blender and mix everything.
Serve hot, and put on it some "crunchy conches"  and sesame seeds

Bon appetit!

INGREDIENTI:

1 kg abbondante di zucchine

2 cipolle medie

2 coste di sedano

2 carote

1 lt di latte di riso

1/2 cucchiaino di curcuma

erbette fresche (timo, menta, rosmarino, salvia,
prezzemolo, tuutto quello che avete!)

un paio di cucchiai di olio

qualche cucchiaio di sesamo tostato

sale

- Delicious thai style soup with yam and coconut milk and one secret about using herbs

Una zuppa stile thai, deliziosa!!!
L ho imparata in Germania.
E' facilissima, rapida, e veramente deliziosa.

Buon appetito!

------------------------------------------------------------------------------------------------
A Thai style soup , delicious !I learned it in Germany.
It 's easy , quick , and really delicious. I experimented that last night, for a dinner I cooked in Italy for 10 people .... they did licked the pot , despite the huge quantity of soup I had prepared ! !
 try it!
One note : you'll have to find the right ingredients, because there are many different kinds of Yam or sweet potato. I used both the types you can see on the pics above (although the original version had only the reddish peel and sweet taste one ( a taste similar to the carrot )
Another note about coconut milk . There are two types , one for dessert and one for normal cooking . Obviously, you have to use not the sweet one.
Finally, the fresh coriander or better, cilantro. It will change wonderfully the flavor of the soup , really . Do not use coriander seeds nor the powdered one. Use only fresh cilantro , it will touch your heart :) as it did with mine :D

NOTE:
yesterday I was talking to a biologist, an expert in nutrition , with whom I hope to collaborate for some specific course , I had confirmation of the goodness of a habit of mine I took just following my instinct eheheh ...here it is.
When you use herbs , do not use only the leaves but also use the stem. that means, DO NOT throw away the parsley stalks but use them cutting them into the food. The biologist told me that while the leaves of the herbs are ok for the smell and good to flavor the dish,  the essential oil is really contained only in the stem ! so, let's use them, as they will give the real taste to the dish and also have healing properties. ERGO  do not throw away the stems of the coriander but cut them properly in the soup

INGREDIENTS:
1 pound of yam
1 large onion
1 full tablespoon of curry
1 can of coconut milk for cooking
1 bunch of fresh coriander - abundant
1 liter of vegetable broth ( or water!)
 oil, salt

Slice the onion and sauté in a drizzle of olive oil, peel and cut the yam into pieces (not too big ) and add them to the onion. Ad the curry. Pour the broth (if you do not have the stock, as sometimes I do not .... I used one liter of water. Simplify ahem) .Cover and cook for about twenty minutes .Make sure that the sweet potato is softened . Turn off the heat and blend everything with the blender .Add the coconut milk and turn on the heat just enough to heat the soup ( coconut milk will have cooled it) .

Before serving, add the chopped fresh coriander .Bon appetit !
