Torta supercioccolatosa vegan e...impressioni di Settembre - Super chocolate vegan cake and....impressions of September

"Quante gocce di rugiada intorno a me
Cerco il sole ma non c'e'
Dorme ancora la campagna, o forse no
È sveglia
Mi guarda
Non so

Già l'odore della terra
Odor di grano
Sale adagio verso me
Penso a te

Quanto verde tutto intorno
E ancor piu' in la'

Resta fermo come me
Faccio un passo
Lui mi vede, e' già fuggito
Respiro la nebbia
Penso a te

No...

I do not know why .. maybe' cause it's a wonderful February ... 'cause yesterday I was at a dinner, and on the terrace, I was in thin shirt and I was not cold at all but sort of excited by the cool tingling .... maybe' cause I cant understand whether it is spring or an autumn full of expectation ... or maybe 'cause it's the song that accompanied me since I was a child, and it knows how to give me yet intense emotions and a few tears certainly not of sadness but of pure emotion. It really touches me and makes me vibrate in a way I can not express in words, at the bottom of the chest and throat. The music and the minimal text, a perfect marriage. Hope you like it too.

And then well, maybe also because on the internet I could not find a decent translation into English! and this song deserves it....not a typical love song!

Google translator does NOT a good job (translates "slowly" as "floor"as, in italian, the same word can mean very different things....! and I said all....)

I wondered how to translate in English the word "Impressions." It 's obvious about feelings, emotions, vibrations, moods ... but not just that. To me, the song has almost pictorial impressions, or at least synaesthetic. The green, the silence, the fog, the sound of the step,  the seeping sun .... I prefer to leave the literal word, "impressions".

Here it is.

Impressions of September
"
How many drops of dew around me
I look for the sun, but there is not
The land is still asleep, maybe not,
is awake, watching me, I don't know.
Even the smell of the earth, the smell of wheat
rises slowly toward me
Life beats slowly in my chest

Breathing the mist, I think of you.
How much green all around and even further,

the grass looks almost like a sea,
and my thoughts fly slight and go...
I am almost afraid they get lost ...

A horse's neck tends to the lawn
remains as fixed as me.
I take a step, he sees me, he is already fled.
Breathing the mist, I think of you.
No... I do not know what I am now,
I am a man, a man in search of himself.
No.... I do not know what I am now,
I'm alone, I'm just the sound of my step.
But meanwhile the sun
already seeps through the fog
the day is dawning,

as always will be"

INGREDIENTS:

60 g unsweetened cocoa powder 100 g flour  1 teaspoon of baking soda 1 teaspoon of baking powder  (about 8 gr)
160 gr sugar
80 g apricot jam vanilla 150 g of soy butter (or, as I did, soft silken tofu)

175 gr soy milk1 tablespoon of soy butter and a little flour for the mold

To cover it: (opional)
100 gr white chocolate
100 gr soy cream

Mix the 60 g of cocoa powder, 160 g sugar, 80 g apricot jam and 150 g of soy butter (I used silken tofu) and vanilla extract. Then add 1 teaspoon baking soda, 1 teaspoon of baking powder and the flour.

Soak it all with milk, put into the mold and level. Cook over very low heat in the oven for about one hour or more '(I have a gas oven and put it to a minimum, say 140 degrees to the max! probably less), The cake "dries" more than cooking, and will remain very humid inside and luxurious ... If you want you can also exaggerate and melt the white chocolate and the soy cream, and cover the cake which will absorb the liquid. But it is great without it, too! Enjoy!

I segreti della peperonata digeribile.... - The secrets of digestible "peperonata" (stewed peppers, onions and tomatoes)

.

Stracuocete i peperoni.

Secondo trucchetto.

INGREDIENTI:

8 peperoni  (6 rossi e un paio gialli)
6-7 cipolle bionde medio grandi
1 bottiglia di passata di pomodoro
qualche foglia di basilico
8 cucchiai di aceto balsamico
5-6 cucchiai di olio extravergine
sale

Buon appetito!

Before the recipe I want to share with you a picture.

A few days ago I heard some opinion about the need 'to vote for navigated politicians in order to un- scatter the vote' : "honest and pure politicians," according to this opinion, would not survive in the jungle of dishonest ones. Good reasoning, really! (I am sarcastic, if not clear ....)

Most of italians seem to think about politicians that "they are all the same." This opinion can contain some truth, but it sounds to me as the will not to take any responsibility about consequences. Last but not least (dulcis in fundo) I received a few days ago a message on the phone, from an unknown user, obviously a spam message, inviting me to read a blog where there is something written about the right to un-vote as a form of protest. I consider this something really silly, and I would like to invite you to read these words of Bertold Brecht. I hope they will let you think, as they did with me. On the need of personal commitment to change things. .... At least one step.

 M
oving on to the recipe /

A trivial peppers dish, but my German friend does not know what it is exactly :) So here I am giving a couple of tricks.
The first one .
Years ago, while working on a yacht, a person tasted my "peperonata", saying "I am very fond of it, but ..... I already know 'that I will not sleep' all night 'cause I cannot digest the peppers!"But the next day the same person was there, thanking me and wondering "how the hell did you do? I ate them in exaggerated quantity and did not have the slightest trouble! YOU have to TELL ME WHAT YOU DID!"
The secret? simple. Overcook the peppers. I use  to cook it  .... for a long. I mean ...forget it on the fire, every now and then stir a bit, almost like a ragu '. Not SO long to let them burn nor melt, for sure, but on the other hand keep in mind that prolonged heat will cancel by the effects of solanine and flavin that cause the unwanted effects of gravity on your stomach.
Second trick.
Generous tablespoons of balsamic vinegar. The peppers will acquire a "quid", 'that' something more '. Indeed, without it, there will not be a real "peperonata", but only (sad) stewed peppers.
When I prepare it, I prepare doses to a regiment, but you can freeze it (if you have some left! Not me!)you see in the picture my peperonata together with a packet of tofu, 125 grams, which I put to cook with the peppers, so that it absorbed the sauce, delicious!!

INGREDIENTS:

 8 peppers (6 red and 2 yellow)
 6-7 medium to large onions
1 bottle of tomato sauce
 a few basil leaves
8 tablespoons of balsamic vinegar
5-6 tablespoons extra virgin olive oil
salt

Clean the peppers and make them into pieces, not too small. Slice the onions into rings not too thin and brown them with an inch of water and 5 tablespoons of oil. When they start to wilt, add the peppers. Stir and cook for 5 minutes, then add the tomato puree. Fill about half / bottle of the tomato sauce with water, and pour into the pot. Add the basil leaves, cover the pan leaving a very small window of opportunity, to let the steam in excess go out, and cook over low heat for a couple of hours. After one hour more or less, add the balsamic vinegar, stir and continue cooking. Serve with cooked tofu, put inside the peppers from the beginning, it is delicious! Bon appetit!

Torta di scamorza affumicata e mele - Apples and smoked cheese pie

Stop."
E in effetti.

Buon appetito!

Don't let the farmer  know how good is the pear with the cheese....
 I've never really understood
this italian proverb. I tried to eat the cheese with pears.
Usually cold pears, cold cheese. Ok, cheese should ALWAYS be at room temperature (certainly not cold from the fridge) and pears maybe too.... but I've always found the combination insignificant. Now I understand that the cold kills the taste (I already knew it, regarding the cheese, but now I know it is true also together with the pear).

I tasted this pie while listening to a jazz concert. When I asked for the recipe of that delight, I have been said only "puff pastry, smoked cheese, apples and pine nuts. Stop."
And actually.
it 'is also delicious cold. But no fridge .... let it cool naturally. 5 or 10 minutes on the table before eating.

In the restaurant where I had it, it was thin and short. I tried to make it a little higher, soft. But probably I prefer the short and thin version.
No matter, the taste is luxurious.

INGREDIENTS:

1 roll of puff pastry
1 smoked scamorza (or other smoked cheese...please let it be SMOKED)
2 or 3 apples
2 or 3 tablespoons pine nuts
2 or 3 nuts (optional)
a few tablespoons of white sauce (optional)
pepper

Roll out the dough (alternatively you can make a fast "mad dough" as we call it in Italy, with flour, water and a tablespoon of olive oil and spread very thin). Cover it with layers of slices of smoked cheese and sliced apples topped with a handful of pine nuts and if you want also walnuts). If it seems too solid make it a little more soft  with a little white sauce, but in my opinion better not not to add it, especially if you have used juicy apples ). Bake at 180 degrees for half an hour, let it cool for a moment in order to cut it better (amazing> cooled is more good!) And serve. Enjoy your meal!

- Apple tart with vegan and very quick shortcrust, with no eggs and no butter!

5 o 6 grosse mele
cannella a piacere
5 o 6 noci tritate grossolanamente

Raffreddare e servire! Buon appetito!

 -----------------------------------------------------------------------------
It 's good, very good, and besides, the recipe is not mine, but the famous pastry chef Luca Montersino, and this recipe is well known ..  I've done in industrial doses (what a surprise!), then frozen, and so as needed is already there, to be defrozen, rolled out and redone in tart version  or biscuit version! Yummm!!

INGREDIENTS:

(I already doubled the doses compared to those found in LM recipe, 'cause for my  mold, 28 cm in diameter, the double doses is what you need ...and better belly burst than good shortcrust lost. !: D)

500 g flour

250 gr sugar
125 g water (ok, the teacher says 128!! I assure you that 130 will be good as well!)
65 grams of sunflower-seed oil, or soy or corn oil, depending on what I have at home ... (the teacher says 64 grams ... but!! 70 also will be fine, I assure you for trying it out. .. ditto for extra virgin olive oil ...)
65 g extra virgin olive oil (not too tight)
1 teaspoon of vanilla extract or 1 vanilla bean grated (maybe what you have boiled in milk for a previous sweet)
1 pinch of baking powder or baking soda
 1 pinch of salt
the grated rind of half a lemon untreated (if you have it)

To cover:

5 or 6 big apples
some cinnamom
5 or 6 walnuts in piecesDissolve sugar in water with a pinch of salt. Add the yeast (there are people who puts an entire bag of it, and I think it is too much, it will make the shortcrust too much soft and "bready". Better half teaspoon ..a pinch ...  .. MY taste, uh). Also add the two oils - reminding you that if you only have one a Tuscan olive oil or from Puglia, or from other parts of the world (arabic countries too), where the oil is VERY strong, then it will be better double the dose of vegetable oil and avoid the olive oil.Unite finally the flour and all the other ingredients.
Mix the minimum to have a slightly sticky ball, and refrigerate in a covered bowl. The cold will make it less sticky, you will see!Keep it in the fridge for at least an hour, but two or three will do the work as well.Roll out the ball on the mold of the pan covered with parchment paper, with the 'help of your fingers.
(Do not use a rolling pin in these cases).

It took me a quantity of apples worthy of a boar, which I plastered over the tart, covered by generous sprinkling of cinnamon and a little chopped walnuts. In the end, I did some doodles with the simple vegan custard, just to exaggerate, but it was better naked like a worm, withour any sauce.Bake for half an hour at 180 degrees. Cool and serve! Enjoy your meal!

Sbafare.
Laconica oggi? :)
Buon appetito!

-----------------------------------------------------------------------------
how nice talking, discovering, unveling, finding points in common, reflecting.

How nice to talk about music, nice to talk about things that I had forgotten that you could talk!
And nice to talk about food! And not only....also about the kitchen, as my friend helped me to move some shelvesand brackets for the kitchen, and now someone will have to
mount them!

Here, however,
I do not throw any food :)
a beautiful green celery, many leaves bright green, and wham!
I did several times, but it 's been improving. It has a mild flavor that is served with something more intense, to give a little character to the pesto. Otherwise, it will be faded. With the right combination, however, is delicious.

INGREDIENTS (for 5-6 people)
leaves of 1 large celery
1-2 cloves of garlic
2 tablespoons toasted sesame seeds
a few tablespoons of oil

salt
a few tablespoons of soy milk
1 pinch of pepper (chili powder)
a pair of sun-dried tomatoes (optional)
nutritional yeast flakes mixed with equal quantityof ground almonds (oR ... parmesan!)

Blend all the ingredients.
Put it on the pasta.
Gobble.
Laconic today? :)
Enjoy your meal!

INGREDIENTI:

1 bella fetta di zucca sbucciata, quella arancione
1 chiodo di garofano
1 manciata di erbette a scelta (salvia o rosmarino)
1 cipolla piccola (opzionale)
1 spicchio di aglio
olio
sale

_________________________________________________________________________

I read for years various sites on raw food. I eat a lot of raw food, but in a very simple and fast way. Few salads, vegetables in every shape, first of all, cabbage winter.
This idea of raw pumpkin inspired me ..... it seems very fast, good if the pumpkin is good, fragrant with herbs and tasty ... well, I said to myself, try it!

And I did it a little 'my way"as always. NOT the blender (I tried, but the poor saint blender can not do it, just use a mixer).

INGREDIENTS:

1 large slice of pumpkin, the orange one
1clove
1 handful of herbs of your choice (sage or rosemary)
1 small onion (optional)

1 clove of  garlic
oil
salt
toasted sesame seeds
1 teaspoon ground cinnamon

Blend all the ingredients. If it is too thick, add a tablespoon of soy milk.
If you want, in the end you can add a few tablespoons of
thick goat cheese or you can whisk together the tofu, to have a delicious dish :) Season with salt, oil and sesam seeds!!

Ragu' senza carne... vegan - Vegan ragout or non meat sauce or bolognese vegan sauce

Questi invece restano a pezzettini.
Servito a tre onnivori. Non si sono accorti della differenza.
E secondo me (vabbe' .....) e' davvero piu' buono, altro che!

 INGREDIENTI

2 carote
2 gambi di sedano (anche qualche foglia tritata)
1 cipolla

Buon appetito!

Great version of bolognese sauce without meat. That 's my favorite. Better than with seitan.
But be careful. There are several types of granular soybean. One seems similar to boulgur or couscous. and 's the real granular type. And there are the soy flakes, which are the ones I used for this recipe, for me are the best.'Cause granular granulated soy is just ... granular in the mouth. Flakes are soft.
Serve this to
omnivores. They will not notice the difference. And according to my taste, this is better than original meat sauce.

INGREDIENTS

2 carrots
2 stalks celery (including some leaves chopped)
1 onion
1 large clove of garlic
300-350 g soy flakes
1 liter and a half of tomato sauce (also 2 liters if you want the sauce 'slightly less dense)
1 tin of chopped tomatoes into pieces
1 glass of wine (I prefer the red but white is fine)
1 pinch of sugar
1 clove
 2 or 3 bay leaves
a few leaves of sage and basil (if desired)
 rosemary sprig
1 heaped tbsp miso or 1 vegetable stock cube without glutamate
a few tbsp olive oil
Usually the ragout recipe calls for soy in boiling water or broth flavor. I sometimes prepare the broth and then I put there the soybeans flakes, but most of the time I jump this step. I present to you my "fast"version

Put the soy in a bowl and cover with water (cold it is ok). While soy rehydrates, finely chop onion, garlic, carrots and celery along with the herbs (except bay). Put in a pan with a few tablespoons of olive oil and a few tablespoons of water. When the colour will be golden, drain the beans (not necessary to squeeze it, as long as it drain it) and add. Add also the glass of wine and miso or the stock cube and stir. After a few minutes, add the bay leaves, pulp or tomatoes, and tomato sauce with the sugar. Cook over low heat with the lid (I leave just a crack 'cause the excess steam does not stretch too much sauce) at least two hours. If you want you can cook it only an hour .... I abound 'cause I love it soooooo much consumed :) but have a look. Every now and then you need to stir 'cause obviously will tend' to attack (even if you use a ceramic pot).Enjoy your meal!
