Buon appetito!
-----------------------------------------------------
How to get your fill of vitamins without cooking anything.
For me now is a habit: I bought broccoli florets , green on top .... well I do not cook them anymore' lately, it seems a pity! :)) I cut and I eat them in salads mostly ... and the rest of the broccoli to the fate of other preparations. Many are surprised "uncoookeeed broccoli ?"
YES ', SO WHAT?! it is good, try it :)
INGREDIENTS> (2 portions)
2 heads of broccoli (you will use only the upper part, you can see it in the picture)
1 small onion
2 carrots
gomasio
roasted sunflower seeds
apple vinegar
half an apple
extra virgin olive oil
Chop, grate, slice, chop again, in short, do what your imagination and linguistic ability suggests. Enjoy your meal!

Pesto di carote al rosmarino e zenzero - Carrots pesto sauce with rosemary and ginger
Ottimo e veloce.
Buon appetito!
-----------------------------------------------
Fast and delicious! Very fast. And good to prepare with pasta, rice, quinoa,
INGREDIENTS>
a bunch of organic carrots
1 clove of garlic
needles of rosemary
gomasio
2 tablespoons of yeast flakes
2 tablespoons of almond powder
1/2 teaspoon of ground ginger
extravirgin olive oil (around 2 tablespoons)
2 fulltablespoons of roasted sunflower seeds
a few tablespoons of water to amalgamate (or soy milk if you prefer, it is optional)
Cook a few minutes the carrots in a little boiling water. Should be softened but not completely soft.
Blend them together with the garlic, rosemary, sunflower seeds, ginger and gomasio and a little oil, help adding a few tablespoons of water if the mixture becomes too thick (or soy milk if you prefer).
I seasoned with this pesto some brown rice, but it 's also good on pasta, or even in sandwiches. Add the plates in the yeast flakes and almonds. Enjoy your meal!

Crema pasticcera vegan (senza latte uova burro) - Vegan custard (no milk no eggs no butter)
-----------------------------------------------------------------------------------
The translation for this title is "custard", but our "crema pasticcera" is a little bit different. It is similar to the custard for the taste and the colour. Anyway, how to make vegan custard , no eggs no milk, no butter? can you?
yes yes .... I can! :)
INGREDIENTS:
300 ml soymilk
20 gr flour
10 g cornstarch (or potato starch)
2 heaped tablespoons of sunflower oil or soy or olive
40 g brown sugar or mascobado
a piece of untreated lemon peel
grated vanilla bean or a hint of vanilla powder
1 pinch of turmeric
Take the vanilla pod and grate a small piece in the milk, as you would with nutmeg .... then add milk and also the piece of lemon peel.
Add the oil, the sugar and put on fire. When it starts to boil, slowly add the flour stirring constantly, and the cornstarch too. If some lumps appear, no panic, pull out the trusty blender and destroy the lumps with a nice treat with the faithful avenger!
Stir over low heat until you will find the custard firmed according to your wishes. And enjoy!
ps. I also tried with stevia drops in.
for the same doses of above, I used
About 50 drops of stevia.
The consistency is a bit less dense, but most of all I need to know which type or brand of stevia sweetener has no hint of"un-natural" taste ....

---------------------------------------------------------------------------
A pie a simple one, very "taste of home", cold outside and warm inside the house, in the fall or in winter ....It is very similar to the original english recipe "Leek and potato pie", but it has not the pastry around (version 1 of the pie), nor the mashed potatoes (version 2 of the pie), but the filling is almost identical, exept for the black pepper grains which, in my opinion, are really great....
-----------------------------------------------------------------------------------------------
INGREDIENTI:
---------------------------------------------------------------------------------------
INGREDIENTS:
3 whole leeks (including the green part)
3 large potatoes (if not big, at least use 5)
salt
1 generous handful of black peppercorns
extra virgin olive oil
nutmeg
a few tablespoons of breadcrumbs
1 glass full of milk (soy or cow if you prefer)
3 tablespoons of flour
2 tablespoons full of yeast flakes mixed with 4 tablespoons full of almond flour (or 6 tablespoons of grated cheese)
5 or 6 thin slices of smoked tofu (or aged cheese like fontina)
Cut leeks (after cleaning them very well) in circle slices, and cook them with a tablespoon of olive oil and a few tablespoons of water in a covered pot. When half cooked, add one full glass of milk and a generous grating of nutmeg and let soften fine.
When they are cooked, add a generous handful of black peppercorns, give it a stir and turn off the heat. In the meantime, put to boil the potatoes in their skins.
If they are organic, once cooked, leave the peel and slice them pretty thin, otherwise peel them first.
Grease a baking dish, sprinkle with breadcrumbs. Lie down on the potato slices, then cover the potatoes with abundant tablespoons of dried leeks with pepper. Still a little grated nutmeg on, you will not regret.
Cover with other potatoes, place a few thin slices of smoked tofu (or fontina, as in the case of the photo above, I was a guest in the Alps., the home of fontina!) And then sprinkle with plenty parmiveg (the yeast mixed with almond flour, or if you prefer use the classic parmesan). A little olive oil over /.
Bake at 180 degrees for an hour, you do make a crust over and then .... enjoy!

Torta di mele vegan senza zucchero con stevia - Vegan apple pie with stevia without sugar
I'm excited by my presence, later this week, at the Festival of Female Excellence to be held in the city where I was born! I'll be one of 5 foodbloggers who will present dishes in the Genius Loci path! See you on Friday at 17.30 at the pub "La lepre" and on Sunday at the same time at the restaurant Locanda Spinola! I will do a little cooking show, two recipe with pomegranate .... see ya!
But let's come back to the recipe of today.
Apple pie is an ever green. You know.
I wanted to try to make a cake that not only had no eggs, no butter, no milk but no sugar as well ....! and I used stevia. Oh yes. Not bad!I have a producer of organic apples This year, because of my travels, I have not yet managed to get him apples, so I had to "settle" for a local producer, whose apples are not bad at all. So, just to say that my apples are organic, REALLY organic, so in the pics what you see is that they are not peeled: richer in fiber :)
About Organic. Be careful when you buy stuff so-called "organic".Yesterday I happened to read this message in a forum:
"Hello, I am the farmer by profession and I have to say that biological (apart what I produce) is not real biologic nor organic, the only biological stuff is that your friend or neighbor who has a small garden produces for his family .... First of all, the water is very important, you can be organic as you want, but then if you use the river water (polluted) ............you can understand. The production area is essential if it is grown close to other farmers who use "poison" your aquifers are polluted, and your land too. An example may be that of farm-producers ... twenty pounds of meat (chickens) and then Saturday and Sunday a large crowd of people come to have lunch....MORAL ........... ......... if you are lucky enough to have a relative or friend who has the garden ..... Hold him tight ... "
mm .. what to say .... I am in complete agreement! That said. Here is the recipe: it 's not very sweet, I state. Especially if you use stevia drops, like I did. with the stevia powder the effect is much sweeter. But read here as the stevia is a green leaf...why and how can we extract a white poweder? is it safe? well, it seems the liquid form is a bit better....But I like it, do not know why '..... maybethe powder is a little easier to be weighed. If you want a taste more sweet, add a spoonful of iced sugar (as then I still did! A cosmetic issue :)) or sugar cane. Or increase the number of drops in the dough.
----------------------------------------------------------------------------------
INGREDIENTI:

-----------------------------------------------------------------
This soup is a real pleasure. I mean, just one crazy stuff. You can prepare in industrial quantities, and you can just eat until the end of the world.I prepared it years ago one evening, at midnight, for two guests from Canada, Firmo and Norah, who came to visit me. We got to know thanx to an international travelers association ...the beginning of a wonderful friendship. even if long distance. I hope I will be able to prepare it again for them and their little Dave!
This is the original recipe by my mom, the hands in the pics are hers.
It 's damnly good.
To me, hard to say whether I prefer this version or the Salento version, which I'll put soon in this blog ...But probably this is better .... and not because of a parochial issue. Try it....---------------------------------------------------------------------------
INGREDIENTI:
Gustate. Godete. Buon appetito!

INGREDIENTS: *for pictures, just above
500 g dried chickpeas, soaked in water overnight
800 grams of spinach (even a pound ....)
1/2 red onion
1 sprig of rosemary
2 bay leaves
2 cloves of garlic
1 sprig of parsley
a few sage leaves
a stalk of celery
1 carrot
two tablespoons of tomato paste (or 5 tablespoons of tomato sauce)
2 tablespoons of wine (red or white )
extra virgin olive oil,
salt
1 pinch of pepper
Boil the soaked chickpeas with water, 2 cloves of garlic, two bay leaves and sage. When softened, drain them and keep them soaking in the cooking water (do not drain them) while you prepare the rest. With a perforated spoon, make a puree of half of them (this is the operation my mom does > I simply use my trusty blender .... trivial but effective)
Take one chopped onion, rosemary, parsley, carrot and celery. Mix them. Fry them with a couple of tablespoons of olive oil, then add wine and the tomato paste (or the tomato sauce: my mom uses the concentrate, but I prefer the tomato sauce... please, I am not talking of ketchup!!!). Stir a little bit.
Wash the beets and cut them into big pieces.Add to the mixture and stir well and let cook a little. Then add the chickpeas puree, the left chickpeas too (the whole ones) and the "broth"left from the boiled chickpeas. Add about a cup or two of water, and simmer for a while ... / ...how long? my mother says "as long as the oil of fried veg (onion, rosemary, carrot etc) will emerge "from the soup, and the beets has changed color from bright green to olive drab ...."Um ... I simply translate that with: cook for half an hour. Let cool a little the soup to thicken it. And then add salt if needed Enjoy. Enjoy. Enjoy your meal!

Krapfen di Bogliasco - Krapfen or donuts
-------------------------------------------------------------------------------------------------
Sorry but the photo 'was taken with the usual small mobile this summer, while visiting my mom ...
Carried from the book "The sweets of Liguria"
"This recipe is not 'properly from Liguria, but since after the II world war a small pastry shop in Bogliasco, a fishing village on the outskirts of Genoa, produces these tasty cakes which are appreciated to the point of doing the fame of Roman Zamproglio, the artisan baker who first has proposed. This kinf of sweets by chef Romano are famous in most of the Riviera di Levante ".
I remember that when I was a child, my mother took me to the seaside during the week afternoons. We used to go to Bogliasco.
My father came home for lunch from work, and before returning to the office he usually took us, me and my mom, and took us to the beach in Bogliasco, and then pick us up after work to take us home. Sometimes me and my mother used the train but not so often.
We used to meet my dad in the town square, right next to the bakery of Romano the Famous.... And my mother regularly bought these krapfen of which she was crazy ...
I like all fried food EXCEPT sweets> I'm not mad of donuts nor krapfen. The few times I remember as a child I ate donuts this was strictly with no cream, to enjoy better the taste of the dough. Anyway, it seemed too greasy, although adults enjoyed the lightness of donuts by Romano.
Years have passed, and I learned to appreciate in the meantime fried tastes :)))) and how much!
But this mixture does absorb virtually no oil, seeing is believing.I made this recipe for my mother, and I must say that today I find it excellent. The pasta is marvellous in terms of flavor. The rising of course not 'identical to the donuts bought at the bar, but the taste is much and much better. Maybe with natural yeast it might be better, but natural yeast and I...well, we look askance. Yes, it is hard to keep an eye on wheight, but if I were to raise a "sourdough" I would be invaded daily by croissants, pizzas, breads to no end .... no no, never. Me and sourdough we look sideways at each other with suspicion.
However, to return to donuts, the doug is light, yummy, soft and smooth on the palate and a melting lust .... really, there' not much to say ...just try!

zucchero a velo

Tacos messicani vegani! -Mexican vegan tacos!

Well, another sunny day :) and I still have a temperature, but I insist to treat it with echinacea and propolis. And of course, herbal tea with ginger. The head floats in a mixture of sleepiness and heaviness, but during the day I have moments of vague lucidity and in these moments, as I must stay at home ... I do something in the kitchen for my pleasure and the one of ppl who try :)Today I heard this song on the radio that brought me back to a summer of many years ago, with a smile and a strange feeling, the passage of time ...So I wanted a recipe that might go along well .... and since I had the granular soy, well that's it.

INGREDIENTI:
PER LA TORTILLA:
3 cucchiai grandi di farina integrale
2 cucchiai di farina di mais (o polenta taragna, come ho usato io)
PER IL RIPIENO:
150 gr granulare di soia
500 gr di passata di pomodoro
1 cipolla
1 spicchio di aglio
le foglie verdi di un porro
rosmarino
qualche foglia di basilico
1 bicchiere di vino rosso
1 cucchiaio di aceto di mele (o di succo di limone) (facoltativo)
sale o gomasio
olio
Buon appetito!

INGREDIENTS:FOR THE TORTILLA:
3 tablespoons of wholewheat flour
2 tablespoons corn flour (or corn flour added with buckwheat flour)FOR THE FILLING:
150 grams of granular soybean
500 grams of tomato sauce
1 onion
1 clove of garlic
the green leaves of a leek
rosemary
a few basil leaves
1 glass of red wine
1 tablespoon of apple cider vinegar (or lemon juice) (optional)
salt or gomasio
oil
1 teaspoon ground pepper- chili
1 clove
Dice the onion and the rosemary in small pieces, crush the garlic, fry with a teaspoon of oil and water. Combine the chopped leek leaves in small pieces, soy granules (previously soaked for twenty minutes in cold water and then wrung out, but if you use a sauce sufficiently fluid you can skip this step and add the soy directly to the sauce.) Add the red wine and let it evaporate. At this point add the tomato puree (if you do not soak the soy first, add a large glass of cold water), basil, clove and chili, cover and cook for more than half an hour. If you see the sauce getting too dry, add water and cover again. Cook in order to have a kind of dense sauce, so muh that you can pick it up with a fork.Meanwhile, prepare the dough of the tortilla as explained here by adding to the whole wheat flour also maize flour (I used maize flour added with buckwheat). Elongate with water to create a creamy kneading, not too liquid, and lay it on a hot plate with the help of the back of a spoon. When you can 'turn out with no risk of it remaining attached t the pan, turn it and cook the other side. Put a little filling on one side of the tortilla, fold in half' and cook a bit 'on the one hand a bit' on the other.
Just before eating, add few drops od lemon juice or apple vinegar - only a few!You can prepare the filling in big quantity and put it in the freezer, ready when you need it :)Enjoy your meal!
