Polpette di soia - Soy *non meat*balls


Che nervoso questo pc....si e' rotta la tastiera, ha uno schermo molto piu' piccolo del normale (per me che lo uso moltissimo per foto e immagini, e' un vero disastro) e mi sta rovinando la vista....devo assolutamente cambiarlo. Inoltre all'epoca mi avevano consigliato di usare Avast come antivirus invece del mio fedelissimo Avira, e da quando ho messo Avast ogni genere di virus e rompiscatole vario soggiorna sul mio computer.....grrrrr! e a nulla e' valso disattivare quel maledetto di Avast e rimettere il fido Avira, peraltro consigliatomi all'epoca da un informatico tedesco (mi sa che ne sanno....). L'idea di dover cambiare computer mi turba assai perche' ho appena comprato felicemente la mia nuova macchina fotografica, questa qui di cui sono felicissima....ma che non ho ancora utilizzato, per via della mancanza di tempo! quindi diciamo che le spese al momento vanno contenute....evvabbe', strizzeremo ancora un po' gli occhi su questa ciofechina, per fortuna che ci sono ogni tanto i fornelli per riposare la vista!
Non riesco nemmeno a fotografare decentemente i piatti visto che fotografo sempre in ore notturne e col cellulare, di corsa, mentre affamata cerco solo un modo di testimoniare l'effettiva cottura del piatto :D

Comunque.
I primi corsi di cucina sono stati davvero un successo!
Sono stati tenuti in due citta' diverse, e in entrambe le citta' ho passato momenti veramente divertenti> abbiamo cucinato un menu' davvero ricco e un tantino elaborato, ma il palato ha ringraziato, e sono proprio soddisfatta! La cucina unisce, e quando si puo' cucinare insieme intorno a un tavolo, con una bottiglia di vino aperta e in allegria...il tempo sembra fermarsi. Complici anche le persone simpatiche che ho conosciuto!

Ho fatto queste polpettine usando una intera confezione di granulare di soia. mi sono venute tantissime polpette, e mi e' rimasto un po' di impasto che ho congelato per la prossima volta.
In foto vedete anche sulla destra il finocchietto mediterraneo. E' una specie che ho scoperto al mare, andando qualche giorno a Capraia, ma ho scoperto che esisteva anche in Liguria, Calabria, insomma ovunque sul mare mediterraneo! Si trova abbarbicato sugli scogli di fronte al mare di solito. Spesso si trova la forma senza semi, ma anche i semini sono niente male. Ne ho raccolto in abbondanza e lo sto sperimentando nelle varie ricette. Il suo uso solitamente consiste nel metterlo in un barattolo sotto aceto, e dopo 15 giorni di macerazione usarlo nelle insalate, a crudo. Molto buono!

Grrr this pc is getting me nervous ....  the keyboard broke, the screen is much more smaller than normal (and I use it a lot for photos and images, and it's a disaster) and is destroying my eyes .. .. I must change it. In addition, at the time I was advised to use Avast as antivirus instead of my faithful Avira (suggested to me by a real computer geek from Germany, they really know how to make things work), and since then I put Avast on, all kinds of viruses and various nuisance stays on my computer ..... grrrrr! I put Avira on again but...nothing changed. The idea of ​​having to change computer troubles me much 'cause I just happily bought my new camera, this one .... but I could not used it yet, because of lack of time! then I could say that the costs should be contained by now .... oh well, I will sqeeze my eyes some more on this awful computer, fortunately there is also the kitchen to rest the eyes!

Anyway. 
The first cooking lessons were really a success!

They were held in two different cities, and in both cities I spent a really good time> we cooked a very rich and a little fancy menu but the palate thanked a lot, and I am really satisfied! The kitchen combines people, and when you can cook together around a table, with an open bottle of wine  and fun ... time seems to stop. Accomplices also nice people that I met!


I made these no-meat-meatballs using a whole pack of granular soy. The result were so many meatballs, and I froze some left dough for next time.

In the picture you can also see on the right the Mediterranean fennel. It 'a kind that I discovered near the sea, going on short trip  in Capraia Island, but I found that there was also in my region, in the south of Italy, and all over the mediterranean coast! It is perched on the rocks on the beach usually. It is often found in the
seedless form , but the seeds are not bad as well. I have collected it in abundance and I'm experimenting it in various recipes. Its use is usually put it in a jar in vinegar, and after 15 days of maceration it is used raw in salads,Very good!

INGREDIENTI:

1 confezione di  granulare di soia
1 dado da brodo (meglio se fatto in casa! a breve la ricetta)
1 porro
2 spicchi di aglio
7-8 cucchiai colmi di pangrattato
5 cucchiai colmi di farina integrale
2 cucchiai colmi di lievito in scaglie
1 pezzetto di buccia di limone grattuggiata
erbette varie, quelle che avete in casa: io ho usato
mentuccia selvatica, prezzemolo, finocchietto mediterraneo, zenzero (facoltativi)
1 cucchiaino raso spezie per bryani masala(nei negozietti di alimenti etnici) (facoltativo)
1 pizzico di sale o di gomasio

Sobbollire per 10 minuti il granulare nel brodo. Far raffreddare e strizzare bene.
Aggiungere il porro spezzettato e fatto leggermente appassire in padella. Aggiungere anche l'aglio grattuggiato o schiacciato, la farina integrale e qualche cucchiaiata di pangrattato. Aggiungere eventualemente se la consistenza dovesse essere ancora troppo molle. Aggiungete le erbette e le spezie, a piacere, e il sale.
Formate delle polpettine con le mani bagnate e schiacciatele al centro, e passatele nel pangrattato. Fatele cuocere in forno, a circa 180 gradi, su una teglia ricoperta di carta da forno.  (se preferite ovviamente potrete friggerle....saranno piu' buone, anche se meno leggere!) Io per una questione di velocita' ho preferito cuocerle su una piastra calda, 5 minuti almeno per lato, anche se lo svantaggio e' quello di rischiare di bruciacchiare la panatura. Buon appetito!

INGREDIENTS

1 package of granular soy
 1 stock cube (preferably homemade recipe will be given nextly)
1 leek
2 cloves of garlic
7-8 heaping tablespoons of breadcrumbs
5 full tablespoons of whole flour

2 full tablespoon of yeast flakes
1 small piece of grated lemon zest
various herbs: what you have at home! I used
wild mint,
Mediterranean fennel , parsley, ginger (optional), 
1 teaspoon of spices for biryani masala (optional)
1 pinch of salt or gomasio

Simmer for 10 minutes the granular soy in the broth prepared with stock cube. Let cool the soy and wring well.
Chop the leek and make slightly dry in the pan then add it to the soy. Also add the garlic -grated or crushed, whole wheat flour and a few tablespoons of bread crumbs. Add flour where appropriate; if the consistency is still too soft. Add herbs and spices and salt.
Give the dough the shape of small balls with wet hands and mash in the center, then coat in breadcrumbs. Cook in oven, 180 degrees, and of course if you prefer you can fry them .... will be more good, though less light!). I had to be quick today so I really cooked them on
a hot plate, at least 5 minutes per side. But the risk is burning the surface....but they were good! Enjoy!

Pasta con semi arrostiti - Pasta with roasted seeds





Che periodo da favola questo!
No dico....sto ripetendo da mesi che "sono quasi invidiosa di me stessa", ma non avrei pensato che un periodo magico come questo durasse per cosi' tanto tempo....mi piace anche quello che non mi piace, e tutto e' nelle mie mani, ecco...
Erano anni che non mi sentivo cosi' piena di energia, cosi' felice di svegliarmi la mattina, cosi' curiosa e con un senso di liberta' e di contentezza!
Anzi, avevo sprecato troppo tempo in una sorta di bolla in parte eteroprodotta ma nella quale mi ero adagiata autonomamente...per mia scelta. Uscire dalla bolla e' stato molto piu' gioioso di quanto potesse sembrare mentre mi ci trovavo ancora dentro...quando ne esci, finalmente ti rendi conto del mondo che ti circonda!

 tutto ha cominciato ad accadere in un click, in un momento, a guardarmi indietro! e le cose hanno cominciano a subire una netta accelerazione, la vita ha ricominciato ad andare alla giusta velocita' e con una vibrazione piu' vitale, piu' rapida e pulsante, le cose hanno cominciato ad accadere per miracolo finche' guardando tutto questo arriva il momento in cui ti dici "ah pero'.....a saperlo prima!"

La colonna sonora di questo periodo e' stata questa , un ringraziamento generalizzato verso tutto e tutti, le esperienze e gli incontri che mi hanno portata a essere chi sono e che mi porteranno ad essere chi saro'...(invece di ringraziare l'India mettiamo pure "thank you Netherlands" perche' una certa esperienza olandese e' stata e continua ad essere molto ispirosa)

Qualche esperienza cosi' come qualche incontro a volte e' inutile negarlo, e' obiettivamente un vero spreco di vita, ma ho scoperto che e' importante perdonarsi questi sprechi e questi errori, perche' significa che in quel momento non si era in grado di pretendere di piu' e di meglio, sembrava che ci si dovesse accontentare. Per fortuna la vita ti fa cambiare idea :)
Chi o cosa devo ringraziare?! :) qualche idea ce l'ho....ma prima di tutto me stessa.

 Oggi qualcuno mi ha presa affettuosamente in giro chiamandomi "donna rinascimentale", dai molti campi di interesse :))))) qualcun altro invece mi ha paragonata a Sailor Moon, vestita da marinaretta con la padella in mano, la macchina fotografica nell'altra e un lettino di fianco....per tralasciare una serie di altre cose....e questa presa in giro un po' scherzosa un po' affettuosa mi ha fatto pensare che in effetti mi piace cambiare, questo si'. E che l'esplorare le cose che mi piacciono e' un po' un obiettivo che raggiungo giorno dopo giorno...mi manca il castello, ma per quello mi sto attrezzando!

Questa pasta me l ha consegnata la mia amica Sara che scrive qui ed e' sempre fonte di idee e di perfezionamenti. L ho un po' modificata. Lei nella sua ricetta non mette l'aroma naturale di arancia ma i semi di finocchio. La prossima volta provero'...

This is a fabulous period!
 I have been repeating for months that I am "almost jealous of myself," but I never thought that a magical spell like this would last such a long time ....I like even what I don't like, and everything seems to be in my hands...It was a long I did not feel so full of energy, so happy to wake up in the morning, so curious and with a sense of freedom and contentment!Indeed, it had been years that I lived in a kind of bubble (sort of created from outside, but in which I stayed cohoperatively)  ... my choice. Getting out of the bubble is much more joyful than it can seem  while you're still inside ... when you come out, you finally realize the world around you, and everything starts to happen in one click all at a time, things start to have a sharp acceleration, life begins to turn in the right direction and with a vibe more vital, more quick, things seem to happen by miracle and you start to think "ah gosh, if I had known it before.....! "

Because yes, some experience and some encounters are sometimes useless, it is undeniable...  they do are a waste of life, but I have found how important is to forgive yourself for these wastes and these mistakes, 'cause it means that at that time you were not able to ask more from life and you felt as you had to be content with the little you had. Luckly life will make you change your mind :)

Who or what I have to thank! :) I've got some ideas .... but first of all myself.
The soundtrack of this period was this as a general thank to everyone and everything, the experiences and encounters that led me to be who I am and who I will be' ... (instead of thanking India I might say "thank you Netherlands" 'cause some ducht experience was and still is very inspiring)

Today someone joked me calling me a "renaissance woman" with many fields of interest :))))) someone else called me Sailor Moon, dressed as a sailor with the frying pan in one hand, the camera in the other hand and some other things ....  this affectionate joke made ​​me think that it is true that I like to change. And really, exploring the things I like, is a goal that I'm getting day by day... I still miss the castle, but for that I'm gearing up!

This pasta recipe was given by my friend Sara who writes here and she 's always a source of ideas and improvements. I changed a little her recipe. She does not add the natural orange powder but she uses the fennel seeds which I didnt add. Next time I'll try '...

INGREDIENTI: *per persona

80-100 gr pasta integrale
1 cucchiaino pieno di semi di lino
1 cucchiaino di semi di sesamo
1 cucchiaino di semi di girasole
1 cucchiaino di semi di papavero
un po' di polvere di arancia
1 cucchiaio di olio extravergine
1 cucchiaiata abbondante di parmiveg *ovvero 1/2 cucchiaio di lievito in scaglie e 1/2 cucchiaio di mandorle macinatte
sale o gomasio a piacere

Fate tostare i semini con una cucchiaiata di olio evo in una padella. Quando la padella si fa calda, i semini (specie di sesamo) tenderanno a scoppiettare: coprite la padella con un coperchio dopo aver aggiunto l'aroma di arancia e fate scottare ancora un minuto poi spegnete. Fate bollire la pasta al dente, quando e' cotta conditela con i semini saltati, il lievito e le mandorle, un po' di sale (io ho usato il gomasio) e volendo ancora un filo di olio crudo. Gustate! E' profumatissima di profumo noccioloso tostato, fa veramente salivare in abbondanza....e l aroma di arancia ci sta benissimo! Buon appetito!

INGREDIENTS: * per person

 80-100 gr wholemeal pasta
 1 full teaspoon of flaxseed 
1 teaspoon sesame seeds
 1 teaspoon of sunflower seeds
 1 teaspoon poppy seeds 
a bit of powdered orange 
1 tablespoon extra virgin olive oil 
1/2 tablespoon yeast flakes and 1/2 tablespoon of mixed almonds  
gomasio or salt 

Toast the sesame seeds with a tablespoon of olive oil in a frying pan. When the pan gets hot, the seeds (especially sesame) will tend to crackle. Cover the pan with a lid after adding the orange powder and then blanch for a minute then shut off. Boil the pasta not too much.... and when 'cooked toss with the seeds, yeast flakes and almonds, a bit of salt (I used the gomasio) and if you still want a little olive oil. Enjoy! It 's fragrant, perfumed, it really makes you salivate in abundance .... and the orange aroma is great! Enjoy your meal!

Formaggio fuso e stracchino della BEFANA VEGANA- Vegan soft cheese



Ok. Lo ammetto. Chi mi conosce lo sa.
Ho una passione smodata per il formaggio.
Francese, per lo piu'.
Sono un vero topo.
Il top(o) del godimento per me e' l'accoppiata formaggio francese e vino italiano (giammai il contrario).
L'eccellenza da entrambe le parti dell'Alpe.
Oui, pour moi. Pero' anche certi formaggi italiani....un sogno.
Quindi, vegan o non vegan, diciamolo. Un Camembert o un Roquefort (la maiuscola ha le sue ragioni), per non parlare dei formaggi dell'Auvergne...beh, non si potranno mai veganizzare. Con buona pace dei total-vegan.

Detto questo, cerco di mangiarne il meno possibile. Generalmente non li compro nemmeno. Sono assolutamente convinta della poca salubrita' del formaggio per varie ragioni, sia per aver sentito parlare personalmente il Dott. Berrino in occasione di un camping vegano in cui cucinavo per i clienti (in cui ci ha parlato del Progetto Diana), sia per le recenti ricerche che sembrano correlare l'osteoporosi al consumo di latte (tutto il contrario di quel che si diceva una volta!), sia per il contenuto  di ormoni e sostanze alimentari date alle mucche e che per forza si ritrovano  concentrate nel latte. E poi fa ingrassare, sigh, diciamocelo. E quando sono all'estero, costicchia. Quindi, a meno che non sia appunto formaggio "come dico io", non mi scomodo per una mozzarella al super.

Ho scoperto pero' diversi modi per sopperire all'uso di formaggio nei piatti che lo richiedono. E sto ancora sperimentando.
Ho trovato su veganblog la ricetta dello stracchino, e ho voluto provarla. Ma ho aggiunto all'impasto qualcosa per renderlo ancora piu' formaggioso nel gusto: il parmiveg, cioe' lievito in scaglie e farina di mandorle. Risultato: squisito. Spalmato su melanzana alla piastra, ha superato la prova. Lascio a voi l'esperimento.

That said, I try to eat as little cheese as possible. Generally do not buy them either. But I discovered different ways to make up for the use of cheese in dishes that require it. And I'm still experimenting.I found the recipe of stracchino on an italian veganblog, and I wanted to try it. But I added something to the mix to make it even more cheesy (ehr...) in taste: flakes of yeast  and almond flour. Result: delicious. Spread on grilled eggplant, has passed the test. I leave you to experiment.___________________________________________________________________

INGREDIENTI:



135 g di tofu 
22 cucchiai di latte di soia (non zuccherato, ovviamente)
5 cucchiai di amido di mais (maizena) o di patate (fecola)
1 yogurt di soia naturale

il succo di  mezzo limone
1 cucchiaio di lievito in scaglie
2 cucchiai di farina di mandorle
6 cucchiai di olio evo
sale


Frullate bene il tofu con 3 o 4 cucchiai di latte fino a renderlo quasi una crema. Mescolate in un pentolino il latte rimanente con l'amido e l'olio. Quando comincia ad addensarsi, aggiungete il tofu, un pochino di sale a piacere, il lievito, le mandorle e lo yogurt. Mescolate a fuoco medio fin quando non diventera' un impasto cremoso ma denso. Aggiungete il succo di limone, date una vigorosa rimescolata e spegnete. Lasciate raffreddare. Ponete in frigo.
Consumate su melanzane, pasta, dove volete! ha un po' il sapore del formaggio fuso, delle sottilette, se mangiato senza abbinamenti assomiglia allo stracchino. La prossima volta lo faro' senza lievito ne' mandorle e il limone lo mettero' in cottura (dovrebbe assumere un saporino leggermente amarognolo ancora piu' simile allo stracchino...)

INGREDIENTS:
 135 g of tofu 
22 tablespoons soy milk (unsweetened, of course) 
5 tablespoons of cornstarch (cornflour) or potatoes (starch) 
1 yogurt natural soy
the juice of half a lemon 
1 tablespoon yeast flakes 
2 tablespoons almond flour
6 tablespoons extra virgin olive oil 
salt 

Blend well the tofu with 3 or 4 tablespoons of milk until it is almost a paste. Mix the remaining milk in a saucepan with the starch and oil. When it starts to thicken, add the tofu, a little salt, yeast flakes, almond flour and yogurt. Stir over medium heat until they become a creamy but dense mixture. Add the lemon juice, take a vigorous stir and turn off. Let it cool. Place in the fridge.Try it spread over some roasted slices of eggplant, or pasta, where you want!  Next time I will try without almonds and I'll put lemon in during the cooking (it should take a slightly bitter taste similar to italian stracchino ...)Enjoy your meal!
