Molto buono!

Grrr this pc is getting me nervous .... the keyboard broke, the screen is much more smaller than normal (and I use it a lot for photos and images, and it's a disaster) and is destroying my eyes .. .. I must change it. In addition, at the time I was advised to use Avast as antivirus instead of my faithful Avira (suggested to me by a real computer geek from Germany, they really know how to make things work), and since then I put Avast on, all kinds of viruses and various nuisance stays on my computer ..... grrrrr! I put Avira on again but...nothing changed. The idea of having to change computer troubles me much 'cause I just happily bought my new camera, this one .... but I could not used it yet, because of lack of time! then I could say that the costs should be contained by now .... oh well, I will sqeeze my eyes some more on this awful computer, fortunately there is also the kitchen to rest the eyes!
Anyway.
The first cooking lessons were really a success!
They were held in two different cities, and in both cities I spent a really good time> we cooked a very rich and a little fancy menu but the palate thanked a lot, and I am really satisfied! The kitchen combines people, and when you can cook together around a table, with an open bottle of wine and fun ... time seems to stop. Accomplices also nice people that I met!
I made these no-meat-meatballs using a whole pack of granular soy. The result were so many meatballs, and I froze some left dough for next time.
In the picture you can also see on the right the Mediterranean fennel. It 'a kind that I discovered near the sea, going on short trip in Capraia Island, but I found that there was also in my region, in the south of Italy, and all over the mediterranean coast! It is perched on the rocks on the beach usually. It is often found in the seedless form , but the seeds are not bad as well. I have collected it in abundance and I'm experimenting it in various recipes. Its use is usually put it in a jar in vinegar, and after 15 days of maceration it is used raw in salads,Very good!
-------------------------------------------------------------------------------------------------
INGREDIENTI:
1 porro
2 spicchi di aglio
7-8 cucchiai colmi di pangrattato
5 cucchiai colmi di farina integrale
2 cucchiai colmi di lievito in scaglie
1 pezzetto di buccia di limone grattuggiata
erbette varie, quelle che avete in casa: io ho usato
mentuccia selvatica, prezzemolo, finocchietto mediterraneo, zenzero (facoltativi)
Buon appetito!

INGREDIENTS
1 package of granular soy
1 stock cube (preferably homemade! recipe will be given nextly)
1 leek
2 cloves of garlic
7-8 heaping tablespoons of breadcrumbs
5 full tablespoons of whole flour
2 full tablespoon of yeast flakes
1 small piece of grated lemon zest
various herbs: what you have at home! I used
wild mint, Mediterranean fennel , parsley, ginger (optional),
1 teaspoon of spices for biryani masala (optional)
1 pinch of salt or gomasio
Simmer for 10 minutes the granular soy in the broth prepared with stock cube. Let cool the soy and wring well.
Chop the leek and make slightly dry in the pan then add it to the soy. Also add the garlic -grated or crushed, whole wheat flour and a few tablespoons of bread crumbs. Add flour where appropriate; if the consistency is still too soft. Add herbs and spices and salt.
Give the dough the shape of small balls with wet hands and mash in the center, then coat in breadcrumbs. Cook in oven, 180 degrees, and of course if you prefer you can fry them .... will be more good, though less light!). I had to be quick today so I really cooked them on a hot plate, at least 5 minutes per side. But the risk is burning the surface....but they were good! Enjoy!

Tofu marinato all'arancia (in onor del guru) - Marinated tofu with orange juice (in the honour of my guru)
Eh si...ho conosciuto il mio guru.
Bjorn Larsson.

Oh yes ... I met my guru.
Bjorn Larsson.
"Hi Bjorn, I wanted to thank you 'cos you are my guru!"
"Oh well, I'm very glad to know, but tell me more, may I know why?"
"Well, after reading your "From Cape Wrath to Finisterre" I quit my job and I sailed for a few years!"
"Oh that's nice to hear, and tell me, which boats? Anyway, I'm glad to hear, long ago I was in Brest where a angry woman came to me and told me she gave my next book "A need for freedom" to her husband, then he disappeared after 3 months! What will happen if you read it? "
"I do not know, what's sure is that I have to read it!"
The photo is terrible cause made with an old mobile phone, and late at night, so very dark.
This simple but tasty tofu and was accompanied by raw beetroot (yes, not boiled nor baked! yummy). I grated them, seasoned with olive oil, salt and lemon.

INGREDIENTI (per 2):
250 gr tofu
1 arancia
olio, sale, pepe
Buon appetito!

INGREDIENTS (for 2):
250 g tofu
250 g tofu
1 orange
1 pinch of powdered orange peel or grated orange peel (organic....)
1 teaspoon of barley malt
1 teaspoon fennel seeds
1/2 teaspoon ground ginger
3 cloves (only the crushed heads...ehr...)
1 teaspoon sweet paprika
1/2 teaspoon of chili powder
2 teaspoons of sunflower seeds
1 large clove of garlic
oil, salt, pepper
Slice the tofu and then make small triangles. Sprinkle with malt, spices, orange juice and orange powder or grated rind and a little oil, and the grated garlic. Leave to marinate a few hours - I let it one afternoon for example :)
Heat a pan, place the drained tofu (without marinate) and let it go until it is golden brown. It will assume a beautiful color because of the sugar. When ready, add the sauce from the marinade and heat just for a few seconds, just to warm it up, remove from heat and serve.
In the picture I added the seeds of pink pepper, but only for the photo ... in reality the pink pepper goes well with raw beetroot, grated and seasoned with olive oil, lemon and salt, with whom I accompanied the tofu! Enjoy your meal!
