Sformato di porri con patate al pepe nero - Leek and potato pie with black pepper


Un tortino semplice semplice, ma molto "sapore di casa", di caldo dentro casa, in autunno o in inverno.... E' molto simile all'originale ricetta inglese "Leek and potato pie", ma non ha la pasta intorno (come in una versione di tale " pie") ne' ha le patate schiacciate (come in un'altra versione di tale "pie"), ma il ripieno e' praticamente identico, tranne che per i grani di pepe che secondo me, in abbondanza, stanno veramente ma veramente bene....

A pie a simple one, very "taste of home", cold outside and warm inside the house, in the fall or  in winter ....It is very similar to the original english recipe "Leek and potato pie", but it has not the pastry around (version 1 of the pie), nor the mashed potatoes (version 2 of the pie), but the filling is almost identical, exept for the black pepper grains which, in my opinion, are really great....

INGREDIENTI:

3 porri interi (compresa la parte verde)
3 grosse patate (se non sono grandi, usatene almeno 5)
sale
1 manciata abbondante di pepe nero in grani
olio evo
noce moscata
qualche cucchiaiata di pangrattato
latte (di soia o di mucca se preferite)
3 cucchiai di farina
2 cucchiai pieni di lievito in scaglie mescolato a 4 cucchiai pieni di farina di mandorle (o 6 cucchiai di formaggio grattuggiato)
5 o 6 fettine sottili di tofu affumicato (o formaggio tipo fontina stagionata)
1 mazzetto di prezzemolo, compresi i gambi

Tagliare i porri (dopo averli ben lavati) a rondelline e farle appassire con un cucchiaio di olio e qualche cucchiaio di acqua in una pentola coperta. Verso fine cottura aggiungete 1 bicchiere colmo di latte in cui avrete sciolto bene la farina e una abbondante grattata di noce moscata , mescolate bene coi porri e fate ammorbidire bene. 
Quando sono cotti, aggiungete una manciata abbondante di grani di pepe nero, date una ultima rimescolata e spegnete il fuoco. Nel frattempo mettete a bollire le patate con la buccia. 
Se sono bio, una volta cotte lasciate la buccia e tagliatele a fette piuttosto sottili, in caso contrario sbucciatele prima. 
Oliate una teglia, cospargetela di pangrattato. Adagiatevi sopra le fettine di patate, poi coprite le patate con abbondanti cucchiaiate di porri appassiti con il pepe. Grattuggiate ancora un pochino di noce moscata sopra, non ve ne pentirete. 
Coprite con altre patate, mettete alcune fettine sottili di tofu affumicato (o di fontina, come nel caso della foto di cui sopra, mi trovavo ospite a La Thuile, la patria della fontina!) e infine cospargete con abbondante parmiveg (il lievito mescolato alla farina di mandorle, o se preferite usate il parmigiano classico). Un filo d'olio sopra/.
Infornate per un'oretta a 180 gradi, fate fare una crosticina sopra e poi....buon appetito!

INGREDIENTS:

whole leeks (including the green part)
3 large potatoes (if not big, at least use 5)
salt
1 generous handful of black peppercorns
extra virgin olive oil
nutmeg
a few tablespoons of breadcrumbs
1 glass full of milk (soy or cow if you prefer)

3 tablespoons of flour
2 tablespoons full of yeast flakes mixed with 4 tablespoons full of almond flour (or 6 tablespoons of grated cheese)
5 or 6 thin slices of smoked tofu (or aged cheese like fontina)


Cut leeks (after cleaning them very well) in circle slices, and cook them with a tablespoon of olive oil and a few tablespoons of water in a covered pot. When half cooked, add one full glass of milk and a generous grating of nutmeg and let soften fine.
When they are cooked, add a generous handful of black peppercorns, give it a stir and turn off the heat. In the meantime, put to boil the potatoes in their skins.
If they are organic, once cooked, leave the peel and slice them pretty thin, otherwise peel them first.
Grease a baking dish, sprinkle with breadcrumbs. Lie down on the potato slices, then cover the potatoes with abundant tablespoons of dried leeks with pepper. Still a little grated nutmeg on, you will not regret.
Cover with other potatoes, place a few thin slices of smoked tofu (or fontina, as in the case of the photo above, I was a guest in the Alps., the home of fontina!) And then sprinkle with plenty parmiveg (the yeast mixed with almond flour, or if you prefer use the classic parmesan). A little olive oil over /.
Bake at 180 degrees for an hour, you do make a crust over and then .... enjoy!
