Fiori di zucca alla piastra ripieni di verdure e formaggio (vegan) - Zucchini flowers in the pan, filled with vegetables and cheese




Sono riuscita a trovare anche qui un contadino di fiducia con l'orticello che coltiva verdurine senza usare pesticidi e affini. Vi dico solo che nei fiori di zucca trovo sempre grandi quantita' di formicuzze che hanno trovato riparo li' dentro (e che ovviamente raccolgo una per una per ridare loro la liberta' :D)

I managed to find here a farmer who cultivates the backyard vegetables without using pesticides and the like. I only say that in the zucchini flowers I always find large quantities' of small ants who have found shelter inside (and of course I pick them one by one to give'em their freedom back as usual: D)


INGREDIENTI:

una dozzina di fiori di zucchine (i miei sono piccoli)
3 zucchine
1 carota
100 gr stracchino (io ho usato quello di riso)
abbondante prezzemolo (soprattutto i gambi)
1 spolverata di zenzero macinato
1 cucchiaio di olio
2 cucchiai di mandorle in polvere
1 cucchiaio di lievito in scaglie

Lavate i fiori di zucca. Io non li svuoto ma immagino che la gente normale lo faccia :)
Grattuggiate le zucchine e la carota, mescolatele allo stracchino con un cucchiaio. Aggiungete gambi di prezzemolo tragliuzzati con una forbice e qualche foglia, e una bella spolverata di zenzero. Se usate il sale, salate...e aggiungete l'olio.
Lasciate a marinare per un'oretta.
Riempite i fiori di zucchina, adagiateli su una piastra piatta da piadina o su una padella antiaderente dal fondo piatto. Fate cuocere a fuoco alto per un paio di minuti, in modo che si faccia una piccola crosticina sotto. Poi versate un dito d'acqua e coprite, abbassando il fuoco. Togliere dalla padella delicatamente, versare sopra le mandorle mescolate con il lievito secco  e gustare. Buon appetito!

INGREDIENTS:

a dozen zucchini flowers (mine are small...)
3 zucchini
1 carrot
100 g soft cheese (I used rice vegan cheese)
plenty of parsley (mainly stems)
1 pinch of ground ginger
1 tablespoon of olive oil
2 tablespoons of ground almonds
1 tablespoon baking chips

Wash the zucchini flowers. I do not empty them but I imagine that normal people do it :)
Grate the zucchini and the carrot, mix them the soft cheese with a spoon. Add parsley stems finely chopped with a pair of scissors and add a few leaves, and a good sprinkling of ginger. If you use salt, salt (I do not) ... then add the oil. Let it marinate for an hour.
Fill the zucchini flowers, place them on a pan with a flat bottom. Cook over high heat for a few minutes, so that you make a small crust below. Then pour a little water and cover, lowering the fire. Remove from the pan gently,
pour over the almonds mixed with the dry yeast and taste. Enjoy your meal!
