Tortelli di zucca alla mantovana - la ricetta perfetta! - Pumpkin Ravioli Mantua style- the perfect recipe!











Erano anni che volevo provare a farli. Dopo averli mangiati, ripetutamente, nel ristorante più famoso di Mantova, dove la cuoca li fa ancora a mano, uno a uno. Stavo passeggiando per Mantova e l ho vista che li stava confezionando...sono entrata e ho chiesto cosa ci fosse dentro...amaretti e mostarda...la sera sono tornata a mangiarli e incredibilmente ho incontrato un collega genovese, venuto apposta in quel ristorante per assaggiarli...

sono buonissimi, una esplosione di sapori che restano ben distinguibili seppure perfettamente amalgamati, una meditazione, una esperienza, per me uno dei piatti più buoni in assoluto.

Io ora credo di averli fatti identici: il sapore è quello. Fantastici. Ho solo scelto di farli con la sfoglia senza uova. Che mi piace di più. Ma a voi la scelta ovviamente.

PASTA SFOGLIA senza uova
400 gr farina
200 gr acqua circa (ma controllare: a me ne è servita un pochino di più, a voi potrebbe servirne un pochino meno: aggiungete poco a poco)
un pizzico sale

Impastate e fate riposare.

RIPIENO:
750 gr zucca
90-100 gr mostarda di frutta con sciroppo compreso nel peso (io ho messo due bei grossi pezzi di frutta e almeno 3 cucchiai abbondanti di sciroppo)
90 gr amaretti
buccia grattugiata di un limone
pangrattato quanto basta
100 gr parmigiano (io ho usato il parmi veg)
noce moscata

PER IL CONDIMENTO
burro
salvia (io ho usato salvia in polvere)
pepe
sale
parmigiano grattugiato o in scaglie fini

Cuocere la zucca in forno, togliere i semi e la buccia. Frullarla insieme alla mostarda e agli amaretti e aggiungere la buccia grattuggiata del limone. Mescolare insieme al parmigiano (o al parmi veg) e aggiungere un cucchiaio abbondante di noce moscata. Aggiustare di sale e pepe.

Fare la sfoglia: riempite con il ripieno e date forma ai ravioli. FAte bollire in acqua bollente, e quando vengono a galla, scolateli e conditeli con il burro fuso con la salvia. Aggiungete abbondante spolverata di parmigiano grattuggiato o, come ho fatto io, parmigiano in scaglie un po' "tritate" grossolanamente.
Io ho aggiunto ancora un po' di pepe in grani della Nuova Guinea, ottimo e delicato.

I had wanted to try to make them for years. After having eaten them, repeatedly, in the most famous restaurant in Mantua, where the chef still prepares them handmade, one by one. I was walking around Mantua and I saw that she was making them ... I went in and asked what is the secret ... and the answer was: italian macaroons (amaretti) and "fruit mustard" which is something special and you can buy online: it is fruits in a sweet syrup enriched with mustard oil, so it is sweet and spicy at the same time: it is amazing to be accompanied with meats, and it is absolutely needed for this special Mantua ravioli ... 

 they are very good, an explosion of flavors that remain clearly distinguishable even if perfectly blended, a meditation, an experience, for me one of the best dishes ever. 

 Now I think I have made them identical as in the restaurant: the flavor is right. Fantastic. I just chose to make them with the pastry without eggs. Which I like best. But the choice is yours of course.

 INGREDIENTS:

DOUGH without eggs:

 400 gr flour 

About 200 g of water (but check: I needed a little more, you might need a little less: add little by little) 

a pinch of salt 

Knead and let it rest. 

THE STUFFING: 

750 gr pumpkin 

90-100 gr fruit mustard with syrup included in the weight (I put two nice large pieces of fruit and at least 3 abundant tablespoons of syrup)

 90 gr amaretti (italian macaroons) 

grated rind of one lemon 

breadcrumbs 

100 gr parmesan

nutmeg 

 

 FOR THE SEASONING

 butter

 sage (I used powdered sage) 

pepper and salt 

grated parmesan

 Bake the pumpkin in the oven, remove the seeds and peel. Blend it together with the mustard and amaretti, and add the grated lemon peel. Mix together with the parmesan (or veg parmi) and add a generous spoonful of nutmeg. Season with salt and pepper. 

 Make the dough: then spread it thin, andput with the filling at a certain distance and cover, in shorts: shape the ravioli. Boil them in hot water, and when they come to the surface, drain and season with melted butter with sage. Add a generous sprinkling of grated Parmesan cheese or, as I did, roughly "chopped" parmesan flakes. I added a little pepper and ....enjoy your meal!
