Traditional british crumpets - I tradizionali crumpets inglesi






I am happy! weeks ago, I finally found a group to sing with :)
They are wonderful musicians, one guitar/mouth-organ, and one violin/flute/piano.
I am the vocalist, but they are very very good in singing too, and it is a total fun!
We already played at a Festival, but we hope to organize more and more live happenings, who knows.... :)
The name of the group is .....well....ehr.....Crunchy Frog, and try to guess where the name comes from...from the absurd, totally crazy humor by Monty Python


We play traditional english and irish folk music, and a few american folk songs.

So, here they are: a few songs we perform, just to give you an idea, and of course the recipe of today is traditional and very british :)





Crumpets are served, in England, for tea time, and tasted with sweet jams or marmelade.
They look a bit like american pancakes, but there is no comparison: crumpets are FAR BETTER!
not only because they are fluffy and lighter in fats, but the taste is incredibly better, especially if you experiment them with different kind of flours, as I did.
Anyway, the bad thing about pancakes are the eggs: I do not have anything against eggs, love 'em, but no matter how hard you try to improve american pancakes with berries and adds-on: they still taste like eggs, or better, like a rubbery poor flat frittata, like a bad and fleeble omelette.
Well, it is personal of course.

As you can see, I do not love pancakes. I do not love them at all, I also find that they kill the taste of the filling. Sigh. Jam is really better on a nice neutral crunchy toast than on a rubbery eggy pancake. And if I want omelette, I will eat omelette, dot. If I want crepes, I will have crepes. Dot. Not that bad imitation of. Sigh.
Americans will hate me for that. :) but before that, try crumpets, and then you can decide! or, even better, you can still have them both!

Crumpets are A LOT MORE soft, yummy, perfect for breakfast and tea time, but also for lunch or dinner....they are absolutely LOVELY! and very easy and quick! they have been a surprise, so you really have to try them! you can also play with flours and try different flavours.
Traditional recipe is made with milk, in different proportions: but experts say that water helps the crispy surface, and I did them without. Try that!

INGREDIENTS:


220 gr flour (I did half wheat flour and half rye flour, but you can try different ones!)
1 sachet of powder yeast
1 teaspoon of sugar
1 teaspoon of salt
1/2 teaspoon of bicarbonate of soda
approximately 400 ml water (or: half water, half milk if you like)

Mix all the dry ingredients, then add the liquids. You can see, it should look like the pic on the right.
Let he dough rise for half an hour/one hour.
(another version of the crumpets says that you should mix only flour, yeast, sugar and liquids, and let it rise. Then, after half an hour, add the bicarbonate and salt, some liquid if necessary, and let it rise for another half an hour: I can tell you there is not much difference, so let's go for the easiest way!)




Then, drop a couple of spoons of the dough on a nonstick pan, and cook it for 4 or 5 minutes, until a few bubbles will appear on the surface, as in the pic on the right. Flip it over and cook for another two minutes. They are ready!
If you want them crispy, put them under the grill until they are golden, and taste them hot!
Enjoy them as you prefer, with cheese or marmelade or - as I did - my courgettes iranian style or some tahin sauce with yogurt or some goat cheese with a little honey or what you prefer :)

Evviva! Un mese fa, ho finalmente trovato un gruppo con cui cantare :)
Sono bravissimi musicisti, una chitarra / armonica a bocca, e un violino / flauto / pianoforte.
Io sono la cantante, si, ma anche gli altri cantano molto bene, ed è un divertimento totale!
Abbiamo già suonato a un Festival, ma speriamo di organizzare sempre più eventi dal vivo, chissà .... :)
Il nome del gruppo è ..... bene .... beh..... Crunchy Frog, e cercate di indovinare da dove viene il nome? dall'assurdo, totalmente pazzo umorismo dei Monty Python




Suoniamo musica folk tradizionale inglese e irlandese, e alcune canzoni folk americane.

Così, ecco qui sopra un paio di "nostre" canzoni, eheheh, e, naturalmente, la ricetta di oggi deve essere in tema folk tradizionale :) very british

I Crumpets sono focaccine servite, in Inghilterra, per l'ora del tè, e vengono gustate con marmellate dolci o miele. Assomigliano un pochino ai pancakes, ma non c'è proprio paragone.. sono molto meglio! non solo perché sono più leggeri e meno grassi, ma proprio il gusto è incredibilmente migliore, soprattutto se si provano diversi tipi di farine. E comunque, la cosa che non amo dei pancakes è il loro gusto "ovoso", non importa quanto si tenti di mascherarlo con mirtilli o quant'altro: sembrano una frittata venuta male, o una cattiva omelette, sigh. Se voglio una frittata, faccio una frittata, se voglio una omelette, idem. Non una brutta imitazione :)

Gli americani mi odieranno per questo. :) Ma prima di risentirsi, provate questi crumpets, e poi si può decidere! O mangiarli entrambi, perchè no! :)
I Crumpets sono molto più morbidi, soffici e buonissimi, perfetti per la colazione o il tè ma anche per il pranzo o la cena .... sono assolutamente incantevoli! e molto facili e veloci! sono stati una scoperta! rovate a giocare anche con diverse farine.
La ricetta tradizionale è fatta con latte, ma io li ho fatti senza. Provate!
qui una lunga dissertazione in inglese sui crumpets perfetti :)

INGREDIENTI:

220 gr di farina (io ho fatto metà farina di frumento e metà farina di segale metà, ma si possono provare diversi mix!)
1 bustina di lievito in polvere
1 cucchiaino di zucchero
1 cucchiaino di sale
1/2 cucchiaino di bicarbonato di sodio
circa 400 ml di acqua (o: metà acqua, metà latte, se vi piace)

Mescolare tutti gli ingredienti secchi, poi aggiungere i liquidi. Dovrebbe diventare una pastella come  foto sulla destra.
Sia lui impasto lievitare per mezz'ora / un'ora.
(Un'altra versione dice di mescolare solo farina, lievito, zucchero e liquidi, e lasciare lievitare. Poi, dopo mezz'ora, aggiungere il bicarbonato e il sale, un po 'di liquido se necessario, e lasciare lievitare per un'altra mezz'ora: posso dirvi che non c'è molta differenza, quindi cerchiamo di farle nel modo più semplice)!

Poi, far cadere un paio di cucchiai di pasta su una teglia antiaderente
e cuocere per 4 o 5 minuti, fino a quando appariranno alcune bolle sulla superficie, come nella foto a destra. Capovolgere le focaccine e cuocere per altri due minuti. Sono pronti!
Se li volete con la crosticina e morbidi dentro, metteteli sotto il grill per qualche minuto finchè non diventano dorati e gustateli caldi!
Godetevele come preferite, con formaggio o marmellata o - come ho fatto io - i miei zucchine stile iraniano o di qualche salsa tahin con yogurt o formaggio di capra con un filo di miele o quello che preferite :)
