Crostata alle mele con pasta frolla vegan velocissima, senza uova ne' burro! - Apple tart with vegan and very quick shortcrust, with no eggs and no butter!



E' buona, buonissima, e d'altronde la ricetta non e' mia, ma del famoso maestro pasticcere Luca Montersino, ormai la conoscono anche i banchi..ma io l'ho fatta in dosi industriali (che sorpresa!!!), l'ho congelata, e cosi' alla bisogna e'pronta per essere scongelata, stesa e rifatta in versione crostata o in versione biscottino! Tie'! Gnammete!
 

INGREDIENTI:

(vi sparo gia' le dosi raddoppiate rispetto a quelle trovate di LM, perche' per il mio stampo da 28 cm di diametro le dosi doppie ci vogliono, e se avanza...crepa panza! :D) (o crepa freezer)

500 gr farina
250 gr zucchero
125 gr acqua (ok il maestro dice 128!!!!)
65 gr olio di semi -di girasole, o di soia, o di mais, dipende cosa ho in casa...(il maestro dice 64 gr...ma!!!!anche 70 andranno bene, vi assicuro per averlo provato...idem per l'olio evo...)
65 gr olio di oliva extravergine (non troppo forte)
1 bustina di vanillina o 1 grattata di bacello di vaniglia (va bene anche quello che avete fatto bollire nel latte per qualche altro dolce!)
1 pizzico di lievito o di bicarbonato
1 pizzico di sale
la buccia grattuggiata di mezzo limone non trattato (se lo avete)

Per coprire:

5 o 6 grosse mele
cannella a piacere
5 o 6 noci tritate grossolanamente

Sciogliere lo zucchero nell'acqua con il pizzico di sale. Aggiungere il lievito (c e' chi ne mette una intera bustina, secondo me e' troppo, diventa "panosa", piu' "margheritosa" che frolla. Meglio una puntina...mezzo cucchiaino diciamo..a MIO gusto eh). Aggiungere anche i due olii ricordandovi che se avete solo un olio toscano o pugliese MOLTO forte, sara' meglio raddoppiare la dose di olio di semi ed evitare quello di oliva.
Unite infine la farina e tutti gli altri ingredienti. Io non setaccio niente e viene tutto benissimo :) Conviene risparmiare tempo!
Mescolate il minimo per avere una pallotta un po' appiccicosetta, e mettetela in frigo in una ciotola coperta. il freddo la rendera' meno appiccicosa, vedrete. Viene in un lampo!
Tenetela in frigo minimo per un'ora, ma anche due o tre andranno bene.
(correzione: l'ho fatta anche sul momento, saltando il passaggio in frigo, e viene bene lo stesso....non datevi pena)
Stendetela sullo stampo della tortiera ricoperto di carta da forno, con l 'aiuto delle dita. (non uso mattarello in questi casi).

Io ci ho intonacato sopra una quantita' di mele degna di un cinghiale, ricoperte a loro volta di abbondante spolverata di cannella e una piccola tritata di noci. In finale, ho fatto dei ghirigori con della semplice crema vegan , giusto per esagerare, ma forse era meglio nuda bruca.

Infornate per una mezzora a 180 gradi. Raffreddare e servire! Buon appetito!

It 's good, very good, and besides, the recipe is not mine, but the famous pastry chef Luca Montersino, and this recipe is well known ..  I've done in industrial doses (what a surprise!), then frozen, and so as needed is already there, to be defrozen, rolled out and redone in tart version  or biscuit version! Yummm!!
 
INGREDIENTS:

 (I already doubled the doses compared to those found in LM recipe, 'cause for my  mold, 28 cm in diameter, the double doses is what you need ...and better belly burst than good shortcrust lost. !: D) 

500 g flour 

250 gr sugar 
125 g water (ok, the teacher says 128!! I assure you that 130 will be good as well!)
 65 grams of sunflower-seed oil, or soy or corn oil, depending on what I have at home ... (the teacher says 64 grams ... but!! 70 also will be fine, I assure you for trying it out. .. ditto for extra virgin olive oil ...) 
65 g extra virgin olive oil (not too tight) 
1 teaspoon of vanilla extract or 1 vanilla bean grated (maybe what you have boiled in milk for a previous sweet) 
1 pinch of baking powder or baking soda
 1 pinch of salt 
the grated rind of half a lemon untreated (if you have it)

To cover:

5 or 6 big apples
some cinnamom
5 or 6 walnuts in piecesDissolve sugar in water with a pinch of salt. Add the yeast (there are people who puts an entire bag of it, and I think it is too much, it will make the shortcrust too much soft and "bready". Better half teaspoon ..a pinch ...  .. MY taste, uh). Also add the two oils - reminding you that if you only have one a Tuscan olive oil or from Puglia, or from other parts of the world (arabic countries too), where the oil is VERY strong, then it will be better double the dose of vegetable oil and avoid the olive oil.Unite finally the flour and all the other ingredients.
Mix the minimum to have a slightly sticky ball, and refrigerate in a covered bowl. The cold will make it less sticky, you will see!Keep it in the fridge for at least an hour, but two or three will do the work as well.Roll out the ball on the mold of the pan covered with parchment paper, with the 'help of your fingers.
(Do not use a rolling pin in these cases).

 It took me a quantity of apples worthy of a boar, which I plastered over the tart, covered by generous sprinkling of cinnamon and a little chopped walnuts. In the end, I did some doodles with the simple vegan custard, just to exaggerate, but it was better naked like a worm, withour any sauce.Bake for half an hour at 180 degrees. Cool and serve! Enjoy your meal!

  5. Ciao,ho provato la tua crostata per il 1 compleanno del mio bimbo...grazie!!è stata apprezzata tantissimo da tutti vegan e onnivori.Io l'ho guarnita con della marmellata di pesche fatta da me e fette di pesche..Divinaaaa!!!custodirò gelosamente la tua ricetta.
