Melanzane grigliate con humus alla feta - Grilled eggplants with feta humus

Nessuna foto decente, ormai la fame fa usare solo il cellulare!


Che periodo pieno! Lingue da studiare, persone incontrate, qualche viaggetto e qualche progetto.Ho ricominciato anche a leggere libri interessanti e a guardare film interessanti (l'anno scorso avevo letto e visto robaccia)
restiamo sull'argomento cibo, che è meglio!

SOno troppo a zonzo, di conseguenza cucino assai poco. Ma, complici le meravigliose serate di venticello fresco, nell'aria tiepida della sera alla luce blu nella Marina, nel silenzio interrotto solo dal morbido sciabordio delle onde contro le barche a vela....wow! E anche nuotare, ho ripreso a fare il mio km e mezzo tre volte a settimana, quindi scoprire che i nuovi jeans che a gennaio non mi entravano (ma che ho comprato lo stesso, lungimirante!), ora stanno un po' larghini....è soddisfazione!

I soliti must estivi in cucina sono rapidi, light ma gustosi: per es. una insalata turca di cui metterò a breve la ricetta, il gazpacho, una nuova versione delle mie piadine light con crusca nell'impasto e che in questo periodo faccio con salmone affumicato e aneto, e molto più raramente gli zucchini all'iraniana. E qualche pasta con verdure, e polpette di soia....ecc.
Questa invece è una ricetta di Lu, che serissiima una sera mi fa "ho letto una ricetta interessantissima su una rivista, ho comprato quasi tutti gli ingredienti, poi mi sono accorta di aver buttato la rivista"
Cominciamo bene.
L'improvvisazione però è andata benissimo

INGREDIENTI per 2 persone:

2 carote lessate
una confezione di ceci lessati (più o meno 250 gr)
100 gr di feta greca noi ne abbiamo usati 200 ed effettivamente sa soprattutto di formaggio, io consiglierei di diminuire la dose e aggiustarla a seconda del gusto)
2 cucchiai di succo di limone
sale, pepe
1 cucchiaio o 2 di olio
1 tazzina di acqua
1 spicchio di aglio
1 grossa melanzana

Si taglia a fette sottili la melanzana e si griglia. Si frullano tutti gli altri ingredienti con il minipimer e si mette la crema in una tazza :) (l'acqua serve per facilitare l'operazione minipimer)
Si spalma la crema sulle fette di melanzana grigliata, e si gusta. Si possono comporre anche torrette, noi eravamo troppo affamate dopo il jogging! Buon appetito!

What a full time it is now! Too many things sometimes, meetings of wonderful people, and projects and new languages to learn, and....and!I started also reading good books again (and watching good movies too, since last year I only watched silly useless stuff)
With the wonderful fresh and sligtly windy and gently warm evenings on the seaside...it is very enjoyable jogging in the evening, at the blue light, along the Marina  in the complete silence broken only by the smooth sound of the the waves lapping against the sailboats...... So, loosing weight and getting fit is really easy while doing sport in such a pleasant way. And of course swimming too! I started again to swim for 1,5 km 3 times a week, so...not bad.
I'm not often at home, therefore I cook very little. Only quick and tasty stuff. And light! I am quite satisfied, since now I can wear nice trousers that were too small in January, while now are a little too large :))))

In the kitchen, what I do is something quick but tasty, i.e. gazpacho, a new version of my light tortillas with bran in the dough, prepared with smoked salmon and dill, and also zucchini iranian style. Some veggie pasta and so on.

But the following recipe has its own history.
Sunday after an hour of jogging I was invited for lunch by my friend Lu, and  "Hey, I read a very interesting recipe in a magazine, I bought almost all the ingredients, then I realized that I had thrown the magazine"
Good start :))))
But the improvisation gave good results:

Ingredients for 2 people: 

2 boiled carrots 
a pack of boiled chickpeas (more or less 250 grams) 
100 grams of Greek Feta cheese (we have used 200 gr and actually I think it was maybe too much, I'd recommend decreasing the dose and adjust it according to taste) 
2 tablespoons of lemon juice 
salt and pepper 
1 or 2 tablespoon of oil 
a few spoons of water 
1 clove of garlic 
1 large eggplant 

Cut the eggplant into thin slices and grill them. Blend and mix all the other ingredients with the blender and put the cream in a cup :) (the water is used to facilitate the blending operation)
Spread the cream on the grilled slices, and enjoy! You can also build up small towers alternating slices and cream, but we could not wait, we were too hungry after jogging! Bon Appetite!
